I just want to thank you a lot ❤️ , my mother was sick so I was looking for something to make for her and I found your recipe which turned out to be delicious and easy to make. Edit: here are the ingredients 2 tablespoon olive oil 1/2 onion 1/4 cup butter 6-8 cloves of garlic 4 small potatoes or 3 large potatoes 1 small parsnip or 1/2 large parsnip One carrot 1 cube if chicken stock or veggie stock 1/2 or 1 teaspoon salt 1 1/2 green onion stems 1/2 teaspoon black pepper 1 1/2 tablespoon dry or fresh parsley 18% cream or milk

Tip: use an immersion blender and you won't need the mixer. You can leave the soup in the saucepan and the immersion blender will puree it beautifully and quickly! Thanks for the recipe.

I prefer things that I blend to be silky smooth and you cannot achieve that with an immersion blender unless you are ready to strain. I find that my high speed blender does a nicer job gives me a silkier product and I don't need to strain it.

I've made this three times and its always so good and makes me feel great. I do the vegan version (vegetable broth and coconut milk) and I highly recommend adding 2-3 tbsp of nutritional yeast. It packs 9 grams of protein and good fiber as well as all your b vitamins and lots of other vitamins and minerals. Highly recommend. it gives it a tiny bit of a cheesy flavor but overall tastes the exact same. Great way to sneak in more nutrition!

I found this video around march last year, around the time when my country went into a full lockdown bc of covid. My mother and grandmother were sick at that time, and i thought making this soup would help them a little. We ended up loving this recipe very much, and my grandmother's appetite improved greatly bc of this. Unfortunately, she passed away in July (not bc of covid, but bc of other diseases). I'm just glad i was able to make this soup couple of times before she passed away. She really enjoyed it, my whole family does. It really is delicious and simple enough to make. Thank you for sharing this wonderful recipe :)

Hey thank you! This soup recipe ROCKS!! I used an immersion blender in the pot to blend instead of transfer to a blender. it worked great (and saved time and messy clean up). This is a fantastic recipe heading into our first fall/winter season of the "virus." And, for US viewers, this is a great budget recipe or a downright excellent one if you're on SNAP benefits due to the economy tanking. Cheap, healthy, simple, and delicious -- this is fantastic. I love getting back to the basics; we've got to be strong. Thanks for this recipe! ETA: it's probably a no-brainer, but if you have a hand-held immersion blender, you don't need to cool the soup and transfer it to a blender (less cleanup, saves time, and safer!).

This video came up last night so I gave it try with what we had at the house. Wholly moly! I did it from memory like this - 1 onion (fist sized) saute in EVOO 5 min, whole head of garlic crushed saute for 2 on very low, 1 delicata squash (it was in inventory - 2 would have been better), 6 potatoes (a little smaller than your fist), pepper, a little smoked paprika, one box of low sodium chicken stock and 2 cups of water. Cooked at low simmer for 20-25 min until everything was done. Added quite a bit of fresh parsley. Used the immersion blender to smooth. Wow is it great! It's good with a little soy at the end (the garlic pops and it's a little sweet) also tried with Chinese black vinegar (the sweetened type) it dulls the garlic flavor a little and make it taste like the garlic was roasted first. I will absolutely so the again with different types of squash, parsnips, sweet potato and whatever else I can think of. It's a great base to work from. Thank you!

I just got home from a beautiful European River Cruise on the Danube. We visited four countries and enjoyed amazing food from a variety of different cultures. My favorite dish was the Wild Garlic Soup we had in a little gastropub in Linz, Austria. I realize this recipe is very different, but it sounds just as delicious! Can’t wait to try it. Just a reminder when you cook any food all the vitamins in the food are gone if the temperature reaches boiling temp also some of the minerals are fussed with other minerals and the body can no longer use them in repair. So ur best option is to eat as as many foods raw as you can or add to cook food at the end when temperature is lower...

@@ashleycerullo1456 That is exactly what I just said the vitamins are released and because they are water-soluble they leave, they evaporate. None of the minerals leave but they bond with other minerals and form a new mineral that the body can't use because the body don't recognize them.

The soup looks great. I was thinking about the potatoes in the soup, it has starch. How can the soup be for weight loss?

You try rutabaga in place of potato. The rutabaga needs be par boiled. It is low starch and tastes mildly like turnip. Some people call them sweedes.

Lovely, very clear presentation in excellent English. However whereas I want to promote functional eating, I think that most of the benefits of garlic would be destroyed in the cooking process. Garlic is very delicate. To get the benefits, try cutting up a clove, leave for ten minutes for it to 'breathe' and then swallowing the pieces. Then later enjoy the taste with this great recipie.

I love your recipes but I will change it a little bc I use coconut milk instead of milk. can you substitute the potatoes with sweet potatoes.

I like that idea as well. I do not eat dairy and favor sweet potatoes over white potatoes. :)

Good idea. Dairy is terrible for the immune system. It produces mucus in the body which is a perfect environment for bacteria to live...which is the opposite of the point of making this garlic soup in the first place. Coconut milk or any other plant milk is a great idea to use instead! :-) (Also, coconut oil is better for the body than using butter and it is better to cook with than the olive oil since the coconut oil does not become toxic when heat is applied.)

If you roast the garlic it will lose its antiseptic oils and can taste bitter. This is more like a potato soup with garlic and cream , rather than a garlic soup. Best solution , eat a clove of fresh garlic covered in salt every day and you wont have to worry about any cold. Good simple recipe tho - done it myself.

Yeah , that's why it's better to eat it with a pinch of salt - fresh. For your taste buds it will be fine in any form but for its health benefits it needs to be fresh uncooked garlic.

Yum! Been looking for things with garlic to ward off illness lately. Thank you. Oh... and I might add some spinach to mine or even seaweed... if you add seaweed be careful with salt. It does add saltiness.
