‘Al dente’ is basically when pasta is cooked just enough to not be considered raw. Italians hate the slightest hint of sogginess in the pasta, so usually we take it out as early as possible. Many people would rather eat pasta slightly raw than soggy. If after biting into, for example, ‘penne’ you see a white ring it’s straight raw though and no good either.

I have a question from what region of Italy has the most famous cuisine. I hear Florence has the most well-known Italian food internationally
@MatteoBaldi3 жыл бұрын
@@thelazyone1881 that's a difficult question, especially because every italian will answer in a different way, probably claiming that the cuisine from their region is the best. Still I would say that because pizza is the most well known italian dish, Naples takes the number one spot for me.
@albertonanni97583 жыл бұрын
@@thelazyone1881 the region with the greatest variety of internationally exported food is probably Emilia Romagna, also known as the kitchen-table of Italy. Parmesan cheese, Parma ham, balsamic vinegar and lasagna all come from this region. Naturally, every region has amazing cuisine and great variety. But, considering what's famous abroad, I'd consider Emilia Romagna to be the home of most international "italian" food.
@bea36303 жыл бұрын
@@thelazyone1881 I don’t know who gave you the info, but Florence is def not a place that has internationally famous cuisine. Lasagna, tortellini, ‘bolognese’ pasta (which we call ‘ragù’ in Italy) and lots of other well known dishes internationally are from Emilia-Romagna, the region of Bologna. Pizza-making is a big tradition in Naples, whereas Rome is the birthplace of carbonara and cacio e pepe, whereas pesto is from Liguria, polenta is something northerners in general eat... of course each region has its own traditions and wherever you go you can find something delicious to eat, but I’d say most foreigners only know those dishes. Also, bare in mind lots of recipes that are considered Italian abroad are not a thing in Italy - for example, virtually nobody puts chicken on pasta here.

As an Italian guy i'm like: "Mmmmh interesting..." Ah and also "Al dente" is when the pasta is elastic and has a mild resistance to the bite. Al dente is just before the pasta is cooked. If you remove a spaghetti from the heat as it gets al dente, it’ll be perfect from the residual heat by the time you’re ready to plate.
