So if I understand this correctly winning tricks doesn't really matter in this game? If that's so, what's the point of them if you win by having no cards in hand at the end of the round?

Winning a trick allows you to lead the next one, while not being able to play to a trick forces you to draw from the deck until you can play. Playing to tricks is the only way to shed cards, so you want to win and lead as many tricks as you can to stay in control. You'll also want to take care to keep as many suits and ranks available so you avoid needing to draw more cards.
