wow, you really hit the jackpot there! i tried the plastic cheesecloth, but found it to be a little easy to tear getting it into and out of molds with curds in it. worked well draining though. LOVE THE DUTCH PRESS!!! wow. as always, thanks for sharing, Gavin!

Great luck to you Lindsy! Gaven, now you need to get creative & invent new recipes to fill that equipment! I'd love to see some photos of Lindsys cheeses he's made over the years with that equipment

Hi Gavin. Regarding the wooden press and the weight ratio. Apparently you measure the distance from the fulcrum to the pivot point. The same distance on the weight side will give you the same pressure. Measure out double the distance from the pivot will give you double the weight. Triple the distance will give you triple the weight - and so on. Congratulations on your find - the stuff dreams are made of. All the best. Gene

Hello Gavin and curd nerds. I would maybe like at some point to try to make some cheese at home. Is it possible, if i dont have access to starter culture, to use cheese of specific type to make more cheese of the same type? I mean, can i buy , lets say, parmigiano or gorgonzola or whatever, and use that to "infect" milk to make that type of cheese? If I'm not able to get packaged culture like the ones Gavin uses to make his cheeses.

Some haul that's going to be very useful for yourself, Also good to see you up & about but take care of that back & get back to full fitness ASAP Oh one thing more do you ship to Thailand as i need to make real cheese when i move there in a years time & there cheese is vile

off the subject but my cheese is getting green mold in storage even the ones i vacuum packed. how do i treat my eqpt to stop it. i use the same space to make bread so figured thats where the green mold came from. my press is built on my bread kneeding table

A run through the dishwasher first, then soak in a weak bleach solution or StarSan made up as directed. Weak bleach is 2L water to 60ml bleach.
