Agreed. Its very tragic to listen his beggings, as this show his suffering, grief and despair for his situation. Even this makes more satisfactory the final battle against him, as you can release him from this torment, and grants Gehrman the freedom at last.

Gehrman pretty much got the worst of it. Everyone else either died, became ravenous beasts, or became lost in the bloodlust of the hunt. The position that Gehrman is in wasn't meant to be permanent, he was supposed to stay in the dream temporarily while Lawrence, Master Willam and Lady Maria were supposed to follow a plan that was meant to help them escape to the waking world. Gehrman has more than likely been in the dream for a very long time and has just been witnessing countless hunters come and go, each one ultimately in the end facing their deaths. Being in a fake world where you are forever cursed to look after it, sending countless souls on a journey that ends with their deaths, would eventually drive a man to his breaking point where all he wants is release. To be free of his burden and to die a true death and not keep coming back to a place where night never ends and where he cannot die. Even at the end when you fight him, he has no hatred towards you or corruption of any kind, he is trying to kill you to spare you the burden of being trapped like him, he's ultimately trying to free you into the waking world, while simultaneously hoping you're a strong enough hunter to best him in battle and free him of his burden and finally grant him his much deserved rest.
