Gemma, I have to say that I really appreciate you listing vegan and vegetarian alternatives and substitutes in your recipes. Although, I am not a vegan myself...my family is and some of my friends are lactose-intolerant and something we like to do once in awhile in the midst of studying for our university exams is cooking. It gets our mind of off work, we get to have fun, and home-cooked meals are always cheaper and better than take-out!

Thank you Secrets in the oven, yes, you can bake these in the oven too. 180C/350F, 15 minutes or so. Bake in a muffin pan. Not all will be good, but the cake ones will :)

I found recipes from the 1800’s archives in newspapers across the country. Most women and cowboys used cast iron mugs in the fire. They used simple ingredients. A cowboy biscuit was cooked in a cast iron mug over an open fire. I love the camping life.

Yeah any recipie that i try with egg in it always comes out eggy and weird. I think its bc 1 egg is way too much for a mug cake. If you think about it, around 2 eggs are used in a whole cake....

I like that these meals can be kept for a couple of days in the fridge and then cooked. So you could feasibly make a few of these on Sunday... then again on Wednesday... and have enough for lunches and/or dinners for the week. Probably best to put them into some sort of sealable dish so they can' be transported easily, but it would give healthy meals, especially for singles! Awesome.

Vegan lemon curd is on my list. Oxy fryer, i think is an air fryer! Bake in a flattish bowl, 180C/350F for 10 to 15 mins. I think that should do it :)

Be careful when refrigerating eggs. It is the perfect place for bacteria and salmonella to form.

I learned recently that it varies based on location on if you should refrigerate eggs. In Europe, they don't wash the outside of the eggs first, so it keeps a protective coating that keeps them safe from bacteria. In America, the eggs we buy were washed during production, so we have to keep them in the fridge because it lacks that protective coating.
