Gennaro's Calzone Pizza with Pancetta and Mushroom

Gennaro’s back with a traditional Italian recipe for Calzone. This folded pizza is stuffed with pancetta and wild mushrooms, gently cooked in a tomato and chilli sauce and topped with buffalo mozzarella and parmesan cheese. A dash of tomato sauce for the top of the calzone before it’s cooked to perfection in Gennaro’s wood fired oven. A delicious twist on a pizza dinner or a great snack to eat on the go. This is what Italian cooking should be about. He has fun, he keeps it simple to respect the ingredients. He keeps it traditional but also isn't worried about shaking it up a bit. He is inclusive, rather than a snob who says, "REAL Italian food needs this specific type of cheese from this specific location, otherwise it's just not done right and you're not capable of cooking Italian food."

I 'm glad he used the technique of adding cold water to mushrooms even with with other elements of the calzone in the pan. Plus also, adding salt and pepper last, if you didn't know this adds the flavour to food. Nice video.

I made it from dough, tomato sauce to the final calzone today. This is my first time to do so and it is so delicious!!! I used chicken breast instead of pancetta. I marinated the chicken with salt, pepper and sweet paprika. I'm gonna make pizza for dinner!!! Love you Gennaro!!!^^
