Thank you for this series. PNW resident but never dug the ducks. Buddy and I took our boat on July 5th to a boat access beach. We were able to harvest 5 geoducks, and shuck 3 dozen fresh oysters. Will be doing both your recipes plus a SE Asian chowder with coconut milk.

Well if you had to do 50 clams, that torch is out of the window. Double pan steam them for 60+ seconds and capture the juice in the bottom pan. Job is done fast and efficient.

The name comes from a PNW Native American word, and the spelling doesn't always make sense to English users. We have many Native American place names here, and the spelling confuses just about everyone who doesn't live here.

I agree the Panopea generosa (geoduck) is the BEST CLAM in the World. They are commercially farmed, like the ones you're preparing, in my backyard.
