Years ago we went camping at the Florida Keys with 3 of my teen aged boys. My cumpadre and his 3 boys were were spearfishers. One fish speared was a large Grouper , (Lapu-lapu). Nobody wanted to clean it. I just salt and peppered it and dump it in the campfire. When the scales were singed, I turned it over, when the other side was singed too, it was ready. We all had the best grilled fish in our lives. Enjoy the Philippines!
