My grandparents came from Germany but they both passed away before I met them. I love seeing recipes from Germany..it brings my heritage to me in food, I love sauerkraut..I have never has it like this though. Can’t wait to try it!

as a asian-australian who just lives (cooks) like a german, first i ate sauerkraut on cheap offbrand pringles, then i decided to cook it, and now me and my family eat fried sauerkraut almost every meal. looking at this has revealed to me that fried sauerkraut is not just something that i created. thank you for saving me much humiliation from me explaining my “brand new recipe” that in reality is a traditional recipe. danke schön.

I attended an Oktoberfest fundraiser years ago for a local Chamber of Commerce. One one of the members had his mom cater the event. Afterwards they were selling off the leftovers. A bought a few big bags of the sauerkraut that was prepared somewhat like this, but juicier. I don't know what was in it, but it was very good. Once it ran out I was bummed. I tracked the guy down and told him how much I enjoyed it and would appreciate the recipe, but he did not share it. I have been bummed about it for the last 15 years. I'm going to try this one. It looks good. Thanks for sharing.

Make a broth: apple juice/white wine/water/sparkling wine or a mix, whatever you have, add insant broth powder mix, bay leaves, pepper, honey or molasse (about 2 tablespoons), put the fermented cabbage in it and boil it.

I'm from West Poland and I remembered like my parents preparing similar way Sauerkraut. Pretty similar but with out Canadian maple syrup. I think my father optionally put little bit sugar to make this dishes slightly "sweet " However I like this recipe 😋 Reminds me my childhood.

I truly appreciate your recipe, and I plan to cook this soon. My parent's fermented their own sauerkraut in stone crocks. It was very, very sour. We had to eat some every year on New Year's Day and I detested it. One year they put the filled crocks in the attic to ferment, and fateful one day it exploded, leaving the attic ceiling strewn with hanging strands of sauerkraut! I was delighted, but they still managed to salvage enough for us to eat. 😵💫

I had no idea you could cook with dried juniper berries. Hubby would LOVE THIS DISH. I make a side dish with sauteed onions, apples, cinnamon, nutmeg, little brown sugar. Its nice with pork, in the fall.

I’ve had a blast this Xmas eating Wurst mit Sauerkraut at each Christkindmarkt I went. We even have one of the oldest “public kitchens” in Regensburg which serves delicious Bratwurst mit Sauerkraut und Süße Senf. Awwww! Time to make it at home!

Great Recipe. Thanks for sharing! Tip: my Oma would take about 1/4 of the Juniper berries and crush them in between two spoons. That way you use less Juniper Berries and still get the same result.

Delicious! I make this type of meal often,I think my hubby taught me to make a plainer version. His grandfather was from Germany, so I guess it was passed down to my FIL. But theirs was lacking apples and spices. I am going to try your version, it look yummy.

Loved the recipe and going to try it now but one thing missing is the quantities… as in how much kraut was in that jar? And how much broth in that cup .. I'm pretty sure that "back before refrigeration" this sauerkraut was fermented to preserve it. This recipe was delicious...but wouldn't last more than a week or two in a mason jar. They ate sauerkraut all winter long...it was about the only Vitamin C consumed until Spring. I was hoping to see how this COOKED SAUERKRAUT was fermented.

I like this recipe but i have found putting everything with the sauerkraut makes everything taste the same. I have been brasing my bratwurst in the sauerkraut with beer. Then grilling onions separately..then topping the bratwurst with the sauerkraut, onions and apples really has better complexity in flavors.
