It’s so interesting to know the original recipe! In Brazil (where I was born) the bread crumbs are sometimes substituted by toasted cassava/tapioca flour. That makes it extra crunchy. Here in Japan we use thicker cuts of meat and panko bread crumbs. Somehow pork katsu is usually served on a bed of thinly sliced cabbage! Because cabbage helps in the digestion of the oily katsu.

Schnitzel made with breadcrumbs is just like chicken fried steak, which is good. But using panko is Way better! Try it both ways and see for yourself. The first time I had schnitzel it was made by a German in a mom n pop cafe in Texas and it was coated in panko and was great! I started making it with online recipes with regular breadcrumbs and it was never as good and didn’t have that golden crunchy breading. I then tried panko and bam, it was just like that first one I ever had that was made by a German. Great!

I've never tried to make this because every house I've lived in had creaky counters and a meat mallet just made so much noise and vibration it was scary. 🤣 I need sturdier counters. I lived in Germany and ate schnitzel in a large pork filet. I had it with lemons and my husband ate with a mushroom sauce. I slaved over a stove and cooked us Five filets. My huge Catahoula dog jumped up to the kitchen counter and ate four of them. It was heartbreaking to me because I think I really cooked them well like German cooks. I tried it again years later and my family was floored with how good the taste and tenderness was in the filets.

I love Schnitzel! But you don’t seasoning? My mom always seasoned. You’re wonderful cooking. Please teach a round German bread with whole wheat and rye is moist inside my grandma call Broa. Is very delicious my favorite of all breads.

I make my schnitzel exactly like you, but always find that the breading is too think, and the schnitzel is too greasy for me. I don't know why I have this problem! Does anyone have a solution?

Try using finer breadcrumbs, making the Schnitzel super thin and only fry them for a short amount of time.
