Only thing I do different, is, I fry my sausage first like in your other video, drain excess grease,, and use whats left in pan to cook onion. Then I only add sauerkraut on very low heat along with the reserved sausage, to just warm through. If you are using LIVE kraut, just warming instead of cooking it, will not destroy the probiotics. But I will eat yours any day of the week. Looks GREAT!

I wasn't being critical, just how I did it, which is almost exactly like yours. Only reason I mentioned only warming the kraut is to keep Probiotics (healthy bacteria) alive. But I have to admit some time I will fry the heck out of, killing all the healthy benefits of sauerkraut , just to get that brown & black stuff like my Mom used to serve. Lets face it, there is no totally wrong wag to cook sausage and kraut. Thumbup to vid. Now I'm hungry again!

I ended up making this last night but served w/mashed potatoes instead of the grilled bread. Didn't have bacon on hand, but I did have bacon grease! Best Polish sausage I've ever made! I finally made kielbasa and kraut properly. I used to brown the sausage first but that always turned the kraut a yucky brown color! Thanks again!

*I was raised on this. Usually no onions. My mom, born & raised in southeastern Kentucky. Cast iron skillet cornbread always with this. Cooked everything in cast iron skillets. I like to cut in 1/4" or thinner, cover entire bottom of skillet. Get all that meat really brown, then I drain the sauerkraut, add to skillet.....That gets ALL that delicious flavor from the meat. Grilling bread....yum!!*

That looks like my skillet. I bought it used and it is very nicely seasoned and very smooth on the inside, cleaned on the outside...it is a Wagner. I snatched it up...

*Antique unmarked Lodge. If it says Wagner on your skillet than mine is older Patricia. You can tell if it is a Lodge by the three gate marks on the bottom of the pan. They were all made the same back then, Griswold, Wagner and Lodge. It is just a matter of preference and keeping up with the Joneses as far as name brand goes. I have them all, if you go to my deep fried mozzarella sticks, you will see my antique Wagner deep fryer skillet. If you go to my Instagram account, it is in the “about” section here on my KZbin channel, we can swap photos of our pans!*

Cast Iron Cooking ...supah...we can become cast iron BFFs. I grew up where a lot of people do camping and dutch oven cooking..they normally use the Lodge with feet. You have probably written a cookbook on dutch oven cooking, eh? Im wanting to buy an enamel cast iron 3 qt dutch oven to bake bread.

I just made this and it was really good. My dad is on German descent and he had introduced me to a sauerkraut brand called Hengstenberg from Germany. It's not in the refrigerated section and it's made with white wine. This sauerkraut has the perfect tartness for me, that I don't even need to rinse it. And to the guy who made this video, 👍. Since you like spicy mustard; if you haven't yet, try horseradish mustard-- I don't even like mustard, but I can eat the horseradish stuff all day! 😁

*That is Bolillo bread. Easy to get in border states like where I live in Arizona. We get it fresh here where you get your bagels from in the grocery store bakery. Ask your bakery at your local grocery store where they have them. Or Google Bolillo bread near me. just remember when asking 2 l’s always make a Y in Spanish. Do you ever cook fresh keilbasa, or always with precooked and smoked. I actually prefer fresh over store packaged kielbasa. Just my preference, fresh from the butcher. Looks like you have a great recipe here though

What does the spicy mustard do compared to regular mustard? & what kind of spicy mustard?...grey poupon? Stadium? Something else..?

*I wouldn’t go with Grey Poupon. I just used a generic spicy mustard. Guldens would pair really nice with this. I don’t eat spicy mustard on a lot of things but it is really good with this. Juniper berries are hard to find, but worth the search in sauerkraut. 5 to 10 berries per lb. depending on your taste.

I live in a desert we don’t even get good tomatoes. Definitely don’t have any juniper berries here. We do sell a lot of cactus “Nopales” here. Tastes te great in certain recipes.That is interesting I’ve never heard of it in sauerkraut. Thanks for letting me know about it!

Going to make this for dinner :) does rinsing the sauerkraut take away any of the nutrients or probiotics? Sorry I am just new to it. Tried it for the first time today and LOVE IT

*No it doesn’t. I am sure they washed the cabbage when they made the sauerkraut. Sauerkraut you buy in stores is pickled because cabbage goes bad quickly. I rinse the sauerkraut to get rid of the vinegar flavor. Normally I love that flavor, but not in this dish. I don’t like the kind in the can because it does not compare to the refrigerated sauerkraut. Let me know how it turns out!*

YO! Iron-Mike, a couple days ago got your "Cast-Iron Cooking" apron my wife ordered. i love it bro! it's really good quality! the way it's adjustable is awesome too, it adjusts to fit anybody the way the tie in the back & neck-loop are connected. I've never seen one designed that way, and it's brilliant. i have a dozen or more aprons, but yours is the most comfortable and adjustable. all my other aprons have a fixed neck-loop and the neck part is not adjustable. yours is and it can fit perfectly on all my family members. your logo on the front really sets it off too! I've really been enjoying it, and I've used it so much it's time to wash it for the first time already, lol. anyway, wanted to let you know bro, you sell one awesome apron. wasn't sure how to get in touch with you other than leaving you a message on one of your videos, so i know you'll eventually see it. anyway, thanks again Iron-Mike, and have a great day bro!

Thanks again so much Johnny! If you guys haven’t tried to cook the kielbasa and potatoes recipe that you put in the oven it is one of my favorites. If you go to the end of the video and click on the playlist, it is the video second to the last. So much easier than my other potato video because you basically toss everything in some olive oil, put it in the cast-iron pan and throw it in the oven. Easy peasy, chickens greasy!
