As originally intended by Belgians who invented French fries, the fritessaus (or fries sauce) is the condiment used as its accompaniment. Now, more and more Americans are turning to mayo as well. Will you do your part?
PS: if you work for a mayonnaise company please contact us. We are looking for a long-term partnership.

As an American, ketchup and mayonnaise are often mixed to create "fry sauce". It's a way of sneakily tricking picky eaters into eating mayonnaise. Most American special sauces are just fancy mayonnaise anyway, as said by popular internet chef Josh Scherer.

Truth: Ketchup is America's fish sauce. American cooking suffered a lot from wartime. A lot of immigrant cultures were living off government subsidies, which were just basics like flour and sugar, so we lost a lot of food heritage. That's why a lot of mainland American cooking is very plain. Many Americans eat so little spice that a sprinkle of paprika is "too spicy". Ketchup is one of the only sources of umami in mainland American cooking. So next time you see a hot dog with ketchup. Think about it like a German sausage with curry sauce, or a Chinese sausage with bean sauce, or Korean tteokbokki with kimchi, or...

One of the main reasons why Mayo is also popular in Germany other than the taste is that it's thick consistency creates less of a mess when eating. When you buy takeaway pommes, or Currywurst-Pommes from a food stand they give it to you in a small rectangle bowl of paper and you eat it while standing (in a public swimming area, in a football Stadium, on festivals, or at any public event). Ketchups isn't a cream, it's a fluid. It's runny on the plate, it sticks less to the fries, it can soak through the paper after a while and it easily ends up on your hands and clothes. Mayo stays firm, it sticks easily on the fries and is pretty safe to eat standin. You can really drown your fries in that shit without worrying to end up looking like a caveman that can't eat.

Correction: OK, so I must admit that I've never eaten Remoulade. I made the above statement because I looked up the product on Amazon uk and came across the Delicato Remoulade from the Taste of Germany shop which called the product Tartar sauce. It also looked the same - white with green specks in it. Going back and looking at the ingredients after reading these comments, I've found that the German Remoulade doesn't seem to include the gherkins which are commonly used in the UK such as in the popular Heinz and Colemans tartar sauces. Googling the difference I think that the Remoulade and Tartar sauce have the same French origin and both have the same base but Remoulades typically have more ingredients and there are more regional variations. So you can have gherkins in Remoulades but I think you would also have more herbs too. I would guess that the German Remoulade is similar to Tartar sauce but a little less tangy due to the lack of gherkin pieces, based on the one brand I looked at. But, like I said I've not tasted it. The Danish Remoulade seems to be a different varient and has a very different aesthetic with its yellow tone and no specks or lumps from what I can see. Anyway, that's enough researching. I hope that clears things up. If anyone had tasted both the UK Tartar sauce and the German Remoulade I'd love to hear what you think.

I've come around on Mayo but still prefer Ketchup. It adds a bit of fruity freshness to the fries whereas Mayo just adds more grease.
