Irene, Thank you so much for your lovely comment. Basically to prevent the mixture from splashing on your hands you will need to have a long spoon or ladle. Secondly you should not cook on high heat. Third thing is to stir continuously in order for the air to escape easily. Otherwise it will form a bubble and burst causing the hot mixture to splash outside the pan.

Venissa, you need to give at least 3 whistles for nicely boiling the Channa dal. You need to add sufficient water to totally immerse the dal with at least 1 inch of water above the dal. The flame needs to be on medium while boiling the dal. To get a little harder Doce you need to cook the Doce for a little longer but without burning it. You also need a very thick bottom pan to make it possible 🙂

Tried your recipe today.... if even after putting on board n cooling, it does not harden on the surface, is there chance it wl if left to dry out overnight or a day more ? The leftovers in the cooking pan did harden....hd to soak in water b4 washing. Pl advise. Thanks for the link..

Jenny, To make the surface of the doce hard, you need to ensure the doce mixture is cooked completely until it easily leaves the sides and comes together in the center like a ball, it should reach a thick, almost dough-like consistency. This helps in achieving the desired firmness once it cools. Maybe you removed it slightly before you reached that point 🙂

Yes, cd be... wl wait longer to cut it into pieces... hv made lines wz the fork .. its looking so nice.. I think i jst very excited when it started coming together n removed it ... sad.. its the first time ive made doce .. used to buy some readymade earlier... Jenny, if you keep it out for a day it will get a little hard on top. You need to understand that when we make Doce at home you will never be able to get the same feel as the ones they sell at the shops. They use copper vessels which have a thick base to make the Doce. They also use wood fire to cook and therefore they can cook the Doce for much longer time than we can cook at home on our gas. Because if we cook as much as they do the mixture will burn at the bottom. They also use extra sugar as that also helps to harden the overall Doce. The ones we make at home can never be as hard 🙂
