Even though there's an outdated function, his is an incredible intro. Thank you so much for sharing your knowledge and for sharing your perspective about the 'organic layout' of the workspace and using the background to place elements and save them for later use; this was something I already knew but didn't really made myself conscious, this really will make me more confortable in using Ai. i didn’t understand the transparent mask you used to change gradients quickly. My gradients are in grascale when i try the transparency mask. Anyone help explain?

I basically created a mask for my object, and the gradient is applied on the mask and not on the object. So that basically means I can only change the colour of my object with one click and the mask takes care of the gradation. Hope that makes it easier to understand!
