Echo Gillette Umm... There are also some scanner apps on the AppStore that do that photo editing part for you and some of them can even correct the angle of the photo. Just sayin' xD

If you can't avoid a shadow gradient in your photo, you can take a second picture with the phone and an identical blank paper in the exact same spot. (maybe easier said than done, but bear with me). Then with the two photos lined up on different layers in your photo editor of choice, use a difference blending mode (experiment some for the best one). Invert your result, then clean it up with a dust/scratches or despeckle filter. With a little work you can get a nice result. I'm sure there are other methods (several layers each converted to B/W with different threshold values), but this is one that I've found works for me.
