GHEE MYSORE PAK
Ingredients :
Besan 100 gm
Ghee 180 ml
Sugar 200 gm
Water 80 ml
Method :
First dry roast the besan in a pan on low flame for 7 to 8 min. Roast until the besan turns aromatic.
Now sieve the roasted besan to remove the lumps in it. Now add the 1/2 portion ghee to besan . If require, add more for liquidy consistency and mix well.
In another pan take sugar and add water and make the sugar syrup.(Or Add the water qty. which will cover the sugar) Cook it on medium flame. Boil the sugar syrup until it reaches to 1/2 string consistency. Now keeping the gas on low flame , add prepared besan ghee mixture to sugar syrup. Mix immediately . Combine well. Stirr continuosly (Add all remaining ghee in the mixture, in batches) First add two tablespoons ghee in it and stir. Mixture will start to thicken and bubbles will form. After ghee absorb , again add two tbsp.ghee and mix .When ghee absorbs, again add 2 tbsp ghee in it. Stir continuosly.
When mixture will leave the sides of the pan, pour the mixture in a lined and greased tin.
Set it on room temperature . When it will set, cut the rectangle pieces of it .
