My go to halibut recipe is a spin on halibut Olympia. Butter the halibut fillet then add 1 1/2:1 Mayo:Parmesan cheese with 2 fresh crushed cloves of garlic. Cover the top and sides of the fillet and bake at 375 till golden brown and bubbly. As you plate it top it with Frenchs Onions. Second favorite is poor mans lobster. Cut halibut into cubes and boil in sugar and salt water till fillet cubes start to float. Serve with garlic butter and enjoy!!
