I was determined to land a giant amberjack on a vertical jig off our local wrecks of Florida! I lost a couple GIANTS but finally successfully landed a nice one! I show you how to fillet it, then meet you in the kitchen for a delicious new recipe! I baked the amberjack in a garlic, butter, cajun sauce for 18 minutes at 400 degrees, highly recommend the recipe!
