Maybe you can make a separate procedure for the caramelized disc on top then just transfer them on top of the cake? Made of sugar, butter, apf and glucose.

It just looked like the "dish" had gotten some burnt sugar and it had not been wiped clean. I worked as a dessert pastry chef and was my worst nightmare everytime I did brulee. Trying to keep the dish "clean" whilst burning sugar.

If you do this again, or for anyone trying it, couldn't you just do like we do with pie crust and wrap the gum paste in aluminum foil and then brulée? Maybe even two layers? I'm not sure if it would still cook the gun paste because aluminum foil isn't very heat resistant, but that's the first thing I thought up.

So much of cake decorating and baking is trial and error. Always learning so I don't think "lfailing" is actually all that bad and actually important for growth

Even though you didn't get the sugar to burn properly, it's still a delicious looking cake. I'm with you on ice cream or créme brûlée when I get dessert. Maybe next time you can make a template (obviously not something flammable) and cover the gum paste so you can burn the sugar to the edge the way a good créme brûlée would be. 🤷. It's nice that you do show fails as well.

you should have done the Caramel part aside by pooling a caramel with few drops of lemon juice to have it more liquide, on a silpat inside a cake ring that have the same diameter than your cake top then when it is cold and set, just to have placed it on top of your cake or even better to have spread some sugar directly on a silpat, cook it till caramelised in a oven then cut it round with a cake ring.

I loved the cake! 🔴🔴🔴 I thought you were going to use one of those stainless steel cake rings and put it in the freezer to make sure it was really cold, and hold the cold cake ring to block the outer edge of the gum paste while you torched the sugar. I think it would’ve worked perfectly. 😊

You get back up and move forward it may look like a failure but that is how we are able to learn and improve our mistakes into something wonderful. My eldest grandson and I watch your videos- sonce the begining and you have inspired him to bake. Hes very good at it and he just turned 12. Hi Yolanda, Hope you're well! As an inexperienced baker, why not add the custard in the middle but making it a bit more firm with perhaps a touch of cornstarch, that way it does not ooze out when you are decorating the cake! Nicole

As soon as you said custard and later blow torch I knew what was going to happen. I had to strip back a cake once because I for got pipe a boarder… my fondant was a write off. I feel and understand your pain. 😢 what’s more is you’re like me when it comes to the presentation of a cake. Perfectionist. I hope it tasted nice though.

You typically don't move the torch when we creme brule, you move the bowl, you let the melted sugar drip and melt to brulee the rest

Hi Yo, you could've put sugar on a silicone mat with a metal mold, torched it to your desired color then place it on top, once cooled. That could've worked? I love your cakes!

Yolanda! This was not a fail! It looks so nice and delicious, will be trying the custard. Also I do understand you wanting a crunchy crust. I think you should tackle said cake we do not talk about one more time. It’s embarrassing how much I think about that cake because we cannot let her defeat you! You can make it smaller! Not add 🍎 under the fondant, but just in the holes of the lattice. Carve the cake to look like the dessert with the hump shape you know. Also instead of getting the 🍎🥧 filling up can just lightly cook them like you did for the 🍎🥧 mega cake. I know you got a lot going on but you should truly try that one again.

I would have made a heat-resistant shield to put between the custard and gum paste while torching. Maybe cardboard covered with foil, curved to follow the edge. Try again!

Yolanda, would it have worked if you caramelized the sugar in a pan first ? You then pour the liquified sugar on the cold (or even frozen) cake. The sugar instantly sets, and then you can blowtorch certain parts of the sugar to make darker spots here and there.

Since the brûlée is essentially a disc of candy once it is torched could you have done the torching of the sugar off of the cake and then placed it on the cake? Just trying to think outside the box.

I thought you might measure the diameter and then pour the sugar into an aluminium circle on a baking tray and brulee it in there. Then let it harden, pick it up and put it on the cake 🤔 would that have worked? It still looks ultra tasty though and I would eat it 😍
