Clarified butter/ ghee is when you strain or scoop the white part off the top of the melted butter until there is none left. Brown butter you just cook it at a little bit of a higher temp and leave it on a bit longer. Also I’d like to note the butter Trisha used was very high quality and was likely already clarified but I’m not sure.

Salted butter has a better flavor for cooking on the stove, grill, or oven. Unsalted butter is better for baking, out of the two choices, because you can add an accurate amount of salt to your recipe that way instead of worrying about the salt in the butter throwing off the amount your recipe calls for :)

@@npn7564 curdling happens when its over whipped not boiled. If you pour in slowly and gradually incorporate the heavy cream into the sauce it shouldn't curdle - thats also why its added at the end

Curdling is when the ph levels drop in dairy and it gets too acidic. Separating into CURDS. Whipping heavy cream turns it into whipped cream. Cooking heavy cream into sauces and soups are done all the time because it’s higher fat content keeps it from curdling.
