I’m pretty sure it is hard, though. I’m also pretty sure all those veggies are also pretty hard and not particularly tasty. I’m sure they all have other patches where they’re growing for the table :)

The cracked eggplant at 3:13 is probably due to just that, overwatering right before picking so the eggplant swells as much as possible. Supraphysiological water retention.

Well, most of them are same taste. few of them as they grew old their taste becomes a slightly different than the younger vegetables.

I'm sure more distinct flavors like onions and peppers taste the same but things like pumpkins and other blander vegetables may taste different

They probably taste like the vegetables they are, but are not cultivated for taste as most vegetables we’ve had are. So they all do most likely taste unique due to genetics and as another comment said due to the time of harvest.
