Making this dressing today but using tamari since my sister can't have gluten and a nice ginger dressing over here is hard to find a good ginger dressing bere!! Will update with results!!!! UPDATE WE LOVE THIS DRESSING! We have the carrots though but oh man this is a delicious dressing. Ours was a little darker because tamari but still super delicious

Another popular way to make this is to add peeled apples and mayonnaise to the recipe, it makes it slightly sweeter and more creamy :) that's what we did at the sushi bar I used to work at and it was so delicious that customers would come in just to buy tubs of dressing to take home!

in Texas we use mayonnaise to thicken this type of dressing instead of carrots/onions. some people also prefer a smooth texture so only the juice of the ginger root is used in that case

I have had ginger dressing in PA, NY, DE and MD but it appears to be slightly different from your take on it. Whenever I have had it the colour is closer to orange and it has a super creamy consistency.

I live in Georgia and all of the restaurants I go to here have a ginger dressing that is white in color. Not sure why everyone else has a brownish or orange color. Maybe no carrots?
