Thank YOU! for the best video on how to manage isomalt easily. Watched so many videos, but none said how much water to add or how long to heat. Most did it on the stove. But, your method of a small amount in a glass measuring cup is better. I love the results! 😊

Our gingerbread houses look somewhat more chaotic and wild, but maybe this year up the game with this technique! Can I use parchment paper, sprayed with oil, instead of the silicone mat?

Hehe yeah give it a try! It’s easy and the windows look so nice! For the isomalt really silicone mats work best, but spraying oil on parchment or even just a smooth cookie sheet should also work fine!

I just tried this out so can report some results. With the water/isomalt ratios suggested in the video (1/2 cup isomalt to 1 tbsp water), you can get a good release with aluminum foil, with parchment paper or with parchment paper sprayed with oil. Foil, assuming you manage to unroll it perfectly flat, gives the clearest window of the three. The parchment paper with no oil gives you a matte/slightly frosted finish, and with oil it'll be clear but you'll get bubbles and waves like old timey window glass.

Wow they shouldn't! My lights definitely weren't strong enough to make them melt...but then again, I only had them on for like 30 minutes at a time!

Instead of Isomalt, I just use Jolly Rancher candies. Different colors for different windows. After gingerbread is baked, put it back in hot oven with candies sitting in window opening. Takes a couple of minutes.

Curious why the added water to the isomalt ? I never add water. Does it do something to it?

I followed the heating instruction ratio for my specific brand on the back of the package. If no water works for you then I say that is totally ok! For me I like it because it is a bit thinner once it's melted and easier to use...but also if you add too much it will keep it from setting up hard!

I'm sorry I'm not sure how many cups of isomalt is equivalent to 1 lb. You'd have to measure it out and calculate the amount of water needed!
