Dear G…better late than never! Your lasagna recipe appeared today 2024/08/15 on my KZbin channel, and I watched twice. I was impressed by the results and the use of fresh nutmeg throughout. Fifty (50) years ago I had lasagna bolognese at a northern Italian restaurant in New York City. I never forgot the incredible flavor and taste of the nutmeg in the bechamel and in the sauce. Just incredible! Thank you so much 😊

I have been making this recipe for a few years now. I learned it from an Italian cookbook and loved it ever since. Have never met anyone who didn't like it! As a personal touch, I like to add a bit of parmesan cheese into the bechamel sauce to make it extra creamy and tasty. Sooo yum!

I had a fabulous lasagna in New York City many years ago. It was unlike anything I had ever tasted. For years I have been trying to figure out what the luscious unusual taste was and the light sauce I was unused to. Being from New York I had eaten lasagna hundreds of times but not like this one. Finally, I realize that the lasagna I had must have been from the north of Italy and the exotic flavor was nutmeg. Thank you so much for this lesson. I can't wait to make your version of lasagna. Thank you very much. Incidentally, what kind of knife is it I see you use? It looks like half a knife. Thanks again.

I’m British🇬🇧, I have never heard of the Neapolitan style lasagna before, in Britain lasagna is this version- it looks delicious, like you I always layer the bechamel sauce between the layers- but hardly anyone does ( I knew I was correct 😂) , usually bolognaise sauce in Britain is beef only, but I will try veal & or pork with it, just found your channel, I love Italian food, so I look forward to watching more recipes ❤

Bolognese sauce does not have veal in it. There is an official recipe by the Bologna Chamber of Commerce. It even states that veal is not allowed.

I live in Tennessee too. Italians really are scarce around here (and those that say they're Italian think being Italian is like being in the movie, The Godfather, and can never speak it LOL). If you live near Nashville, look up Coco's Italian Market. It's the only place I know of to get lots of authentic Italian things. They have stuff that you would never find at Krogers or Publix ^~^ I'm not sure if there are places in the Knoxville or Memphis areas, because I never go there.

Love the recipe….making lasagna tonight-I’ve made lasagna several times before and it has always turned out great but I like to switch things up when I cook to make the food a bit less boring. I’m also making a pollotarian version for my wife who has dairy and red meat allergies (among others)-some of the vegan “cheeses” produced today are exceptionally good, they melt like real cheese and taste like real cheese.

Lasagna is the best, always. Although I do prefer to cook with olive oil only, no butter. I also use non-alcoholic red wine, which is just fine. Lots and lots of nutmeg. Molto bello! 😋👍

They are indeed! Easy, Quick and Delicious. With the meat sauce prepared ahead, the noodles just soaked in hot water, the Besciamelle made at the last minute, it could be assembled and baked any time.

I love spinach and tomato noodles. Haven't made em yet myself. But I have made speatzle from broccoli and potatoes. Adds such an extra depth of flavour and nutrients. I hate waste. Anything that may be usable gets frozen until it's time, and I haven't had a complaint yet.

That giant sized lasagne that covers the whole pan is very cool, have never seen that before... We use Barilla lasagne #189, but we don't soak or boil it, just layer it dry, and it softens in the process of cooking. Before putting in the oven we pour a cup of white wine over the assembled lasagne, and when covered with foil that provides all the moisture it needs.

We call the Trinity a Soffritto. A French call Soffritto a mirepoix. Same thing and cooked the same way. When cooking a bolognese we use equal amounts of onion, carrots and celery. They are sautéed in butter and EVO until almost done and then we had the garlic so it won’t burn. Then we seasoni with Salt & pepper. The meat goes in next and seasoned. Cooked until almost brown and then add wine. White or red. When cooked down we add brown stock and that cooks for up to 2 hours. Tomatoes are next. D.O.P. San Mariano. We season the tomatoes and cook the mixture for 2 hours on low heat. Lastly we add the cream and cook for another 15 minutes. An option at he beginning is to take 8-12 ounces of pancetta and render on low heat and use the rendered fat along with butter and EVO to cook the vegetables. Also, mushrooms may be chopped up and added with the meat or the tomatoes and they bring another layer of flavor to the bolognese. We make a vert large pot and fill many bags that we freeze for future use. Make a lasagna, or use over papardelle or egg noodles. Home made of course. Thank you for your show.

My 12 year old daughter Jaci discovered your channel a few days ago! She first found your Italian hot chocolate (that’s next on the list to make 😊) But as soon as I watched this video I ran straight to the kitchen to make it! I had never heard of any lasagna without mozzarella and ricotta 😁 I love a good béchamel sauce and the idea of adding heavy cream to tone down the tomato sounded wonderful. So I had to try it. I followed the recipe exactly. We absolutely loved it!! It is a new favorite! I would love to have the recipe for green noodles! Also, my daughter wanted to ask of you have a recipe for Alfredo sauce. I’ve made several but none are as good as we’ve found… in a container of Rana 🙈 They usually turn out too thick or too sour or something just not right. We’re looking for a smooth, creamy Alfredo recipe. We have enjoyed all your videos! You’re so easy to listen to and Love the history you add in too. Jaci is watching and learning to cook 😊 ❤️ Gina H. What about putting red wine and milk in your bologneze? I've seen it like that too. I rarely make lasagna, as my mother made it seldomly as well, but when she made it she made it with homemade thin lasagna sheets. She made the dough from scatch and it makes a very big difference in how fine and delicate the flavor is. We aren't Italian, but usually my grandmother use to make homemade very thin noodles for the soup with a special noodle making machine we brought over from Europe when we arrived. It makes a differenza : )). Gratie doamna!!!

I'm from California, but my mom was a real NYC Italian woman. Unfortunately she hasn't been in my life much since I was a small kid, so my entire Italian side was something I (cruelly) never got to know. It's my son's Birthday and I had to look up this recipe to make the perfect Lasagne. Last time I had used Cottage cheese and Gompte Cheese and it was the wrong kind for a lasagne.
