This recap misses or gets a lot of details wrong. First, while the chef technically is mean to Lucia, she's an unqualified sous-chef with a fraudulent resume (she's Andreas' friend.) Second, the old woman wasn't a witch of any kind. She was an herbalist without magic powers. The villagers had accused her and the other women of witchcraft and murdered them in the basement. Third, the chef started cooking outside and everyone followed her because the kitchen literally caught on fire. Everyone had to be evacuated from the building anyways.

The moment the head chef sees a supernatural creature in the property, she should have bailed the hell out of the place immediately since no career worth your life against a supernatural creature. She can just find another investors since there are plenty of people around the country for her to progress her career.

I don't think, in the actual movie, they're unidentified (I can easily identify every plant she was laying out so I doubt a professional chef wouldn't recognize them too). They're just 'wild' versions of known plants. They were bred by an herbalist for medicinal properties rather than for flavor and have been allowed to grow freely since the murders of the herbalists (who were not witches, only accused of it) and thus have a unique flavor compared to intentionally bred modern variants. The unique flavors of otherwise known plants is what's inspiring her.
