Harry I’m continuing to enjoy all of your videos. I’ve even got my ten month old little boy watching along with me. He love helping daddy in the kitchen already. I watched like 3 hours of you and Burrfection sharpening knives, borrowed a friend's whetstones - mostly the same ones you guys were using and sharpened all my knives at home. I don't have anything nice other than a pretty nice nakiri. Didn't do as good of a job sharpening them on the whetstones but at least they're sharper than they were before! Hi Harry, I think it's great of you and dalstrong to host this giveaway. It's a good way for up and comers to add to their collection of bbq tools. I'm happily married and a proud father of 4. My kids are young and we live a busy life, but I do take my BBQ seriously. My kids already show interest in helping me cook and they like to watch pitmasters and youtube bbq videos with me. I've been watching your channel religiously for quite awhile. I aspire to get into competition bbq someday. I enjoy making my own rubs and sauces. Your videos have always helped me along the way. Hi Harry! My hubby watches your videos all the time in his quest for knowledge of all things BBQ! We currently do not have a Dalstrong knife. In fact, I hate to admit this, but it wasn't that long ago that I realized just how important a quality sharp knife is. We don't have an entire set of anything but now have a couple Henckel and a couple Wusthoff knives, but still no Santoku. Hi Harry, Long time subscriber of Slap Your Daddy BBQ. I just bought my grill and started BBQ again after watching you videos. I even rewatch them to try out the recipes and for black belt tips. I would love to have a nice and duruable Dalstrong blade to help split ribs, cut up tri-tip, ribroast and other cuts of meats as i expand my BBQ setup. One of my first ribs recipes as a teenager was a char siu smoked with tea in oven. Another was Asian five spice dry rub with brown sugar and syrup as a binder. Love the asian fusion.

as usual it is great to see a real honest review! I sure could use that knife because I was growing my fine knife collection when a family member (I won't say who because I still need to share a bed her) sold some at a garage sale! Yes, I, like most of us, had numerous knives that throughout the years would get better and better in quality. She thought it would be good to get rid of some duplicates, but she chose the wrong ones....someone has some very nice knives for very little money! Thanks!

I am not happy with their performance and wished I just went big on a few solid Dalstrong pieces. When I saw your post of this video, my eyes lit up 🤩. I don't have much of a collection of knives all I have to use is a the big Chinese butcher knife. I used that for trimming brisket to slicing, trimming ribs to cutting them into pieces. Basically my everything use knife. Definitely love to smoke anything from chicken to beef to pork. So this knife would be a great help on preparing things with ease. Just got into BBQ when the covid started. Your channel and Baby Back Maniac have been helping me to step my game up. I saw your video with Ryky over at Burrfection and picked up a couple wet stones to sharpen my european knives. But after watching a ton of videos on sharpening I have been really looking for a japanese knife after a lot of research, Dalstrong looks to be the leader in the bang per buck category and getting ready to pull the trigger. Hey Harry, I am delighted to see this video. I had marinated some pork butt with traditional marinate and was just wondering if i could use a bbq grill to make char siu. I have used the jar before but lacks flavor and complexity as you have said. Very happy to see the comparison. Thank you for providing the history of Oyster sauce and Hoisin sauce. I grew up in HK (been living in US since 82) but still had no idea how they came about.

That’s a beautiful knife! My kitchen currently has an Old Hickory 10” butcher and a Chinese Carbon Steel Vegetable Cleaver (Choy Dao). I keep both in good working order with a Wicked Edge sharpener. A Santoku would make a great addition to my arsenal as a nice medium blade.

I’m of the personal opinion that while the jarred sauce is convenient being already prepared, the homemade sauce is far superior for being able to make it as one wishes it to taste. For me, I love the tastes of both the hoisin sauce, a lot of garlic, Shaoxing wine, and extra five spice, and I find myself having to tweak the jarred version to fit my preferences. Last night, I made just over 11 pounds of char siu pork butt, which I plan to cook some of today for the weekend, and package and freeze the rest for when I want it. I made my own sauce as I usually do, and I love to do. I see nothing wrong in and of itself in using the jarred sauce, and no one is wrong for doing so, and one can always tweak it with their own spices and seasonings. I find making my own sauce more cost effective as I make a lot of char siu every month and it is a staple food in my diet, and buying 4-5 jars of the prepared sauce is just too expensive for me to justify when I have all the soy sauces, oyster sauce, five spice, sugar, maltose etc to make it myself.

I think the honey is a complex sweetener. The red tofu helps as the fermented tofu has a lot of natural MSG

Hi Harry, have you tried using your wsm to mimic the Hong Kong siu mei ovens? It looks like with a few accessories like the hanger and vortex could do a pretty good job,but those ribs look perfect!

Yes, just take out the water pan and put a hanger frame and hang your char siu on hooks circling the fire ring. No need to goto Hongkong and bring over the siew yoke or char siu ovens!

Nice video. I am glad that we have an Asian grocery store where i live so i should have no issues getting the ingredients. They are stocked! I have no expertise with really good knives as they not in my budget but when i look at your videos and others , i wonder how much easier it would be to cut fat off the ribs and briskets with a quality knife. Appreciate the recipe for the ribs and the great tips as always.

First Harry, I love your videos and have learned so much. My wife and I were judges on the MBN circuit. I would love to win the Dalstrong knife , not for myself but for my son. He has become so chefy and needs a great knife. Several years ago we bought him some knives that we thought were quality, like some we had, but they were very cheap and light weight for a big name brand. My son is a musician and song writer in Nashville and like all musicians these days, they are really struggling because all music events and concerts have been cancelled because of the Corona virus. I have thinking about buying a set of Dalstrong knives but I have never used one so I'm kinda on the fence. If I got this one from you this would definitely help me buy the Dalstrong set I have been wanting. Thanks for all the videos keep spreading bbq love you are awesome

I make ribs weekly but have never once thought about doing them char siu style. Do you keep the foil under the ribs the entire cook or just after hour 1-2?

Man whata knife that is! It slices, it dices; it cuts through the butts (pork butts that is); use it to chop & whack this knife stays on track, it's a lean mean cut'n machine; cut through a knuckle cut through a joint pierce a ham bone with the point; this knife does it all even butcher a calf this is certainly the knife i would like to have!

It's not too surprising that the 2000 year old recipe has a depth and complexity that the commercial product lacks. After all, the factory made sauce is made to produce a profit, not the best flavor. I love the traditional recipe! We'll have to give it a go on our next rack. My wife is Asian and we already have all the ingredients in the cupboard. What we don't have is an awesome knife like the Dalstrong. It would have pride of place in our kitchen! Lon and Eyi.

Hey Harry, John from Melbourne again. Going to try my hand at your Char Siew ribs tomorrow. Just wanted to check with you if you still used the same cooking method as usual. 275F for 2.15 + 1.15 + 0.05? I noticed your ribs looked quite dark underneath, which I believe is from the caramelisation of the sugars from the sauce. I assume they were cooked perfectly fine using the tried and trusted method of yours? Thanks mate. 👍

I would go lower temps 225F when there is a lot of sugar in the marinade or rub. Be sure to say hello to Lance Rosen who is my Melbourne student who runs Big Boy BBQ

For our 15th wedding anniversary my husband wanted to get me a beautiful necklace, but I asked him for a set of Dalstrong knives as those are more practical than a necklace :) I love every single one and use them often while prepping my meals.

I always liked to cook from a young age but I have never had a "good knife". Chopping vegetables and cutting raw meats and fish has always been difficult and I know a good knife would change my cooking life and probably motivate me to buy more of them.
