Do Bay Leaves do anything? All About Bay Leaves - What are Bay Leaves? Where are Bay Leaves from? Are Bay Leaves Poisonous? Why do you remove the bay leaf after cooking? We'll answer these questions and more about this misunderstood Herb / Spice.
AKA: Bay laurel, Roman laurel, Sweet bay, Poet’s laurel
Botanical Name: Laurelus nobilis
Plant Family: Laurel (Lauraceae)
Origin: Asia
- Mostly grown in Turkey
- Other leaves from the Laurel family can sometimes be found, but they have a different flavour
- Not Poisonous…. Despite popular belief, supermarket / spice trader leaves can be eaten. Recipes ask you to remove them before serving, because no-one wants to get a tough and sharp leaf in their mouth during a meal.
- Bitter component, on which to build other flavours
- Simmering for at least twenty minutes, preferably longer, will release all the savoury character into your stock.
- Used in: soups, stews, rice dishes. court bouillon, Bouquet Garni, crab boil, brining meat
- Old leaves… If you can’t remember when you bought the bay leaves in your cupboard - they probably have no flavour.

AKA: Californian laurel
Botanical Name: Umbellularia californica
Plant Family: Laurel (Lauraceae)
Origin: California
Californian bay laurel, is not closely related to genuine culinary bay leaves as the common name might imply. It has a longer leaf and a stronger Flavour than other bay species. The Colour is a deeper green and the long pointed leaves have a menthol aroma on top of the more traditional bay aroma. The problem with this leaf is that the enticing aroma cooks away rather quickly, leaving behind an overpowering, medicinal taste.

We have true Bay Laurel trees in California. I have one in my yard and I dehydrate the leaves myself. Didn't know what the taste profile was, so I made some tea from my dehydrated leaves. It's actually quite nice as a tea. Approximately 3 leaves in 12 oz of water and it makes a lovely, fresh, almost minty-flavored herbal tea. That being said, I still don''t notice any significant flavor profile when I add it to a dish. I tend to wonder if adding it does something chemically to the other ingredients, particularly the protein. And before you question my accuracy of the plant, I bought that plant at a reputable organic nursery for its leaves for cooking.

I have begun powdering the leaves in a coffee grinder just before adding to my recipe. The flavor intensity is wonderful! Will never use whole leaves, again. Plus, I don't have to pick them out at the end!

The Bay Leaf was highly prized in ancient Rome. Fresh leafs were made into a crown called a Laurel Wreath, and was placed atop the heads of those who had achieved honor. Julius Caesar was often depicted in art with a Laurel Wreath, and also the leaders who had achieved victory in battle.

Hey, it's my favourite herb! Hahahaha. I use bay leaves for basically everything. Fantastic in cream-base dishes too. The bittersweet flavour cut through and balance out the heaviness of the cream and perfumed the whole dish!

Hey, Glen. I know this video is a couple years old now, but I wanted to mention that Sobey's often has fresh Bay Laurel leaves (as opposed to California Laurel) now and they definitely dispelled any idea I had about bay leaves being flavorless. They keep well in the freezer and I would highly recommend them.

I have a bay tree. My ex got several cutting for me a few years ago from the bay tree in the butterfly conservatory in Niagara Falls. I love using them fresh off the tree.

Agree. I had a Sweet Bay tree in Texas (before a frost did it in). Fresh off the tree is very nice, and very different than using dried bay leaves.

Pilipinos 🇵🇭 use Laurel leaves or Bay leave as you call it that when we cook Adobos with chicken or pork or both to give flavors to the dish. Menudo (A Pilipinos style also gives flavor. It is good). I never thought of boiling it and drink it as we boiled ginger or salabat. I will try boiling it for digestive system or for acid reflux problems. Thank you for sharing it. 6-6-2020, Saturday. Nice description. I don't notice an actual flavor. It turns out that not using bay leaves is that "something is missing" element of soups. Go figure.

I my house I leave them in because my grandmother told me that it was good luck to get one one your plate. Take it out before you eat because they just don't chew. Also, don't break them up for cooking for the previous reason. They are a wonderful herb just don't keep them around too long.

Also great for keeping bugs out of your flour. I put a few in the bottom of container and a few on top of the flour. I notice the flavor in things like stew.

Their tannin compounds keep fermented pickles crisp, too! If your pickles are mushy, add a few. Grape leaves work even better, but don’t add the lemony herb flavour!

The California one is sweet. I am blessed to have access to a tree. I dry them, then uses them with in about a month or just fresh. You do need to use twice but they are Great, that is my experience with the beautiful bay/laurel from California. When I want a stronger flavor of the leaves, I break or cut them. There is a definite difference between the fresh, recently dryed, and the store bought.

I'm especially wondering about this now, since covid has killed my sense of smell, which makes it harder to determine. I still use them due to recipes telling me to and out of habit so that I don't stop doing it as my sense of smell is returning.

Hope it gets better. I have hay fever and therefore much weaker sense of smell than others, but I still use bay leaves. They really make a difference.

it grows naturally in the mountains of North Carolina. Flavor enhancer and it helps you to sleep well. Burn one in a room of mad people they calm right down. It works.

Bitter? Another one of those ingredients that is supposedly bitter that I cannot taste any bitterness of at all... I never bother to look for it to pick it out (unless it happens to be in the top) and if I get it; I like to chew on it. It has a sort of deep minty "green" flavour with a hint of camphor.

Totally. Completely. UNTRUE!!!! No part of the tree, fruit, seeds, leaf of the culinary Bay (Laurus nobilis) is poisonous. NONE OF IT IS POISONOUS. In fact the fruit and seeds of Laurus nobilis are used as spice in many dishes.

Laurus Nobilis grows really well in the UK, so I'm surprised it's not common in the US. Info says it's the same as the mediteranian variety, but not the same as the Indian variety called Tej Patta, which has 3 veins not one.

Tej Patta are leaves from the cinnamon tree. Many Indian cooks think that bay leaves are the same as Tej Patta. Indian cuisine does not use bay leaves.
