I used a full 14oz can of condensed milk thinking it was the same size. It still set just fine. The second time I made it, I just happened to have some wild black raspberries, so I macerated them and put them on the crust before I poured in the filling. I also used a third egg white the second time I made this to have a bigger meringue. Thanks for doing this one, it’s a new house favorite quick dessert.

My grandmother taught me how to make this version of Lemon Meringue when I was a child in California and would go outside and pick the lemons off our tree *wish I could still do that!* and it's always been my favourite. Thank you for posting!
@Tammie MacClellan Heupei As a Canadian, I hate you for being able to go and 'pick lemons off your tree' - I'm kidding. It's PURE jealousy because I LOVE lemon anything!

I grew up with lemons in California, and my desiderata for my adult life was "a clapboard house with a big front porch, a picket fence, and lemon trees." I got the clapboard house, a smaller front porch, a picket fence, but no lemon trees here in Montana. Apples. Raspberries. No lemons. Alas. I, too, wish I could still go outside and just pick some lemons.

In the late sixties, in San Francisco, California, where I grew up, we lived just a short walk away from a Woolworths department store. They had a counter where they sold milkshakes, coffee and an assortment of slices of different pies among other things. So after or before you did your shopping, you stopped there and got a cup of coffee and a slice of pie. My mom and I always got a slice of the lemon meringue pie. The meringue was very high. I don’t remember how much it cost. But it was inexpensive. I want to say 25 cents. Loved the pie and the memory.

I have a similar memory of a local diner that sold their own homemade key lime pies and they were heavenly. The place has since switched to store bought pies along with everyone else in the area so its something i kind of miss, but this makes me want to make a key lime pie from scratch now!

The only remaining Woolworth lunch counter in the US is in Bakersfield, CA. We discovered it 2 years ago while visiting family. The building is an old Woolworths building. Other than the lunch counter, the rest is for antique booths. Of course we had to have one of their hamburgers and a shake served in the metal container! We were so impressed with the lunch counter, I had to take a full length picture of it. After we got home, we had it enlarged and it hangs at the bottom of the stairs to our basement.

@arthas6404 жыл бұрын
its funny how long that name has struck around. "Ice box pies" were a special type of dessert, especially in warmer places like the south, since ice was fairly expensive at the time and so iced desserts were a special treat as opposed to the cheaper/easy fruit pies. People in warmer areas HAD to buy ice for their ice boxes and they had to be imported from farther away, increasing their cost but the ice was cheaper up north and in some areas people even had their own ice houses where they would harvest ice for free in the winter and save it into the summer but in areas without natural ice or frost it had to be imported, often from lakes in New England.

I've been making this pie over 55 years and my Mother made it before I did, the only change we've made, our family doesn't like meringue, so Mom stopped making it with meringue but cooked the pie about 10 mins to cook the egg yolks, the last years, we serve the pie with whipped cream. Most family members prefer it plain. It's a delicious pie. We have always made this pie with a homemade graham cracker crust. We have a lemon tree in the yard so we always used fresh juice.

Looks delicious. I'm with Julie - Lemon Meringue Pie is my favourite, and given the choice - I'll usually pick that over many other things. Then again, if I find myself in a French Patisserie , as I have on occasion, and there's a slice of Citron tart - with, or without meringue - well, I'm not going to pass that up. It's certainly one way to brighten up a day. My issue with most versions of the lemon/citron pie/tart is that often they're not lemony enough. The ones I find here in Australia seem to have been driven past a lemon, or maybe prepared in a kitchen which had an empty bottle of lemon essence in the pantry.

Morrisons Cafe usually has a slice of lemon meringue pie on offer. It's surprisingly decent, although nothing really beats a home made one. I became something of an expert with Delia Smith's recipe for it when I was young (from her Complete Cookery Course) and now I've got saddled with the job of making it most Christmases, Easters and some other family gatherings. Fortunately it's pretty easy to make and it's so worth the effort! And you could even buy a pastry case instead of messing around with making shortcrust if you really wanted.

This is one of the 3 more popular desserts in Brazil, the main difference being that most people here use condensed milk, lime juice and pouring cream instead of the yolks. The other two popular desserts are 1 - condensed milk flan (or creme-caramel), aka "Pudim" 3 - egg yolk and coconut custard pudding, aka "Quindim", which came from a Portuguese recipe made with ground almonds that were substituted in the tropics with ground coconut.
