For what it's worth, you can also go out of bounds by clipping there from certain sharp edges such as in Alfornada Cavern, Chilling Waterhead or Chargestone Cavern, but with those you only get to explore inside of the map instead of being able to force yourself out of the normal borders. You can also only fly around if you do it in Kitakami/Blueberry because they don't have an ocean.

2:20 from my experience it does end after a while. You get an insane amount of momentum and somehow keep that momentum when it tries teleporting you back so you immediately fly out of bounds again but you do, after a while, decellerate.

Nope, or at least the trainer doesn't appear any differently for the opponent in a battle using a Link Code.

do you know what happens if you do this before unlocking the ride pokemon?

I do not know. My prediction would be you either wouldn't be able to do it at all (because you can't cancel the camera animation with getting on your bike legendary) or you would just freefall, hit the water, and teleport like how you usually do for falling into water without a bike legendary. It would be annoying to get to this spot on the map without having unlocked your bike legend as well. You normally have to enter Mesagoza to initiate the 3 paths, so you'd have to avoid that to get all the way here. I think it is possible, but not something I've experimented with.

Hearing your voice is kind of weird for me. I've only ever seen you in lobby, so I guess I imagined that you sounded like a text-to-speech bot or a text box. Great video though. :)
