LOL. Thank you for your comment. I have been using a hem marker on cakes for 30 years. It seemed like such a great tool for quick and easy measurements on a cake.

Pretty :) thanks for the help. I've been baking and cake decorating for almost 6 years and have yet to try a rosette cake. I'm doing a 1 year anniversary cake for this weekend and I think I just might try this technique! :)

I have had problems with my icing, when I am piping the rosett it kind of breaks before I am done piping it, am I making my icing to hard or I mixed to little?? Oh and I love your detailed videos, I can sit here watching each and every one of them. Thank you!

might be putting too much pressure when piping. have same problem when writing. i would practice little make sure and just adjust pressure or maybe releasing pressure too soon.

Your recipe of Swiss buttercream icing is that enough for that design I will also make rosettes on top. I will make that kind of design for 2 layer 8".

hi chef is this is Swiss buttercream or Italian buttercream and can I pipe roses with this buttercream. I also love all your channels it has teach me a lot specially now I know how to make Swiss buttercream by watching your channel I did a cake for my aunt birthday and I didn't with Swiss buttercream it was really good and tasty and I thank you very much.oh by the way I also buy stuff at your Global sugar art company for my cakes and great prices thanks chef

Love your tutorial! Thanks for posting. I really like the look of the smooth top. Do you have tips on how to make this into a tiered cake? Would you recommend stacking before piping the rosettes? Thanks for your input.

This is easily done in a tired cake. Definitely pipe the rosettes after the cake is iced and stacked using dowels for support.

Thank you so much sir for your wonderful videos. I have been decorating cakes for years but still need to hone in on these skills so you've been tremendously helpful for my growth. I have a quick question though - I had a disaster while transporting this cake where the rosette's actually started drooping down while in the car. There ended up being a separation of the rosettes where you could see the cake in between the icing design - complete and utter fail upon delivery. Do you think this is because I used too soft of a buttercream on the crumb coat? I keep researching but I can't find any info on this.

The most likely cause is that the rosettes were not firmly piped on to the iced cake. A crumb coating of icing may not have been thick enough for the large and heavy rosettes to attach properly. I would suggest a little thicker coating of icing then be sure your are piping into that icing. Also, be very sure your base coat of icing has not crusted over. Otherwise, the rosettes may not attach properly,.

I am working on a buttercream class series that will begin in about two weeks. The first class will be basics of making the cake, baking, cooling, filling and icing. I will also teach how to make buttercream. In the following lessons I will be teaching buttercream piping techniques and decorating cakes in buttercream.
