BLACK FOREST🍰

🇮🇹Ingredients:
6 eggs
120 g of sugar
A pinch of salt
120 g of rice flour (I blended the basmati rice.)
50 g of unsweetened cocoa
50 g of potato starch
500 g of whipping cream
250 g of sour cherries in syrup
Dark chocolate flakes to taste
• for the bath:
300 g of water
100 g of sugar
Zest of 1 lemon
Cook all the ingredients for 10 minutes over medium heat
Method:
• In a bowl, pour the eggs, a pinch of salt, the sugar and whisk well.
• Combine the sifted potato starch, unsweetened cocoa, flour and mix everything in, mixing from bottom to top. • Pour the mixture into a baking tray covered with parchment paper and bake in a static oven for 25 minutes at 180 °
• Cut the sponge cake in two, moisten with the syrup, cover the first layer with whipped cream forming edges, add the sour cherries in syrup together with the syrup.
• Cover with the second layer of sponge cake, level the cream and garnish with black cherries and dark chocolate flakes as in the video.
• Leave to rest for at least 3 hours before serving.
