GF dough is so hard to work with - and I have NO baking talent whatsoever! So these videos are extremely helpful, especially when I see more footage of the dough being mixed up and kneaded. It's so easy! Just add a bunch of vanilla beans (10 or so) into a jar and fill it up to cover with vodka (I always buy Tito's because it's gluten free). You could also use rum, but I find the rum leaves a stronger taste. Put the cap on and put it in a dark area (pantry, for instance) for at least a few months, shaking it a couple times a month or so. You can split the beans open before adding them to the jar if you want, but it's not necessary. 😍

Yes, I've made these and many more of my breads without psyllium husks. It has only been in about the past year that I started adding psyllium husks to a lot of my bread recipes because it does help with the shaping. However, with my bread flour blend and my sweet dough, it is definitely possible to make this recipe without by reducing the milk to 300ml (1 1/4 cups). 😍

Recently found you and cannot wait to try your recipes!! I don't have a stand mixer. Do you know if your bread recipes would turn out as good using a hand mixer or simply mixing with a spoon?

You could try, but you'd definitely need a lot of elbow grease. If you happen to have a handheld mixer that has dough hook attachments, I would try that. Or get a Danish dough whisk like this one: amzn.to/3FemtBy
