【Gluten free】Rice Flour Hot Dogs|Rice Flour Brioche|Homemade Salsiccia
◎Home-made salsiccia sandwiched between rice flour brioche and rice flour hot dog.
Ingredients
Dough
1 egg (5g divided for the batter)
150g rice flour (Mizuhochikara)
2g salt
10g sugar
2g dry yeast
5g oil
Leftover Eggs+Water=140g
(lukewarm water in winter)
4g psyllium
On the surface
Combine 5g of the egg and 5g of the oil and spread it on the surface.
Leave at room temperature for 10 minutes
→40 ℃(104°F)/ for 20 minutes
→190 ℃(374°F)/16~17min.
Homemade salsiccia
Minced pork (150g in the video)
Salt and pepper
Grated garlic
Lemon juice, thyme or rosemary to taste
Toppings
Cabbage
Sauteed with cumin and mustard seeds, marinated, or fresh
Ketchup
Ketchup, mustard
