I used frozen grated coconut. Thawed it and tried the recipe with the same quantities but they all flattened out when baking. What did I do wrong??

Unfortunately when frozen shredded coconut thaws out, there is a lot more moisture than the recipe calls for. You may need to balance that out by adding more semolina to get the correct “wetness” to roll out the bolinhas. Of course the taste of your flattened out bolinhas was probably just as amazing as the ones that the chef in the video shows🤗👏💕🇨🇦
