Goan Caramel Pudding (No Oven) | No Bread | 15 mins | 4 ingredients Flan Recipe
Goan Caramel Pudding, Creme Caramel, Flan or Caramel Custard is a popular childhood recipe that was pretty much the standard dessert on many special occasions in Goa.
Goan Caramel Pudding recipe is very easy, requiring minimal ingredients and gets ready in under 15 mins.
Allergy Info: Contains eggs & dairy but no gluten.
Serves: About 4-6
Ingredients for Goan Caramel Pudding:
Sugar - 1 cup Granulated, divided
Milk - 1/2 litre, use whole milk
Eggs - 4, extra large
Vanilla extract - 1.5 tablespoons
Method:
1. Prepare Caramel using half cup sugar and 4 teaspoons of water.
2. Pour caramel in final mold making sure to cover all edges.
3. Beat eggs well in a bowl.
4. Separately mix milk & sugar well. Add Vanilla extract.
5. Pour the milk mixture into the egg bowl and mix well.
6. Pour everything into the caramelized mold.
7. Pressure cook on medium flame for 10 whistles.
8. Cool down completely & then refrigerate for 3-4 hours.
9. After 3-4 hours, unmold & serve chilled.
Notes:
1) Milk should be boiled & then cooled to lukewarm temperature.
2) Caramel can solidify quickly. So pour into the mold as soon as it is ready & swirl.
3) To easily wash the pan in which caramel was made, simply soak in water for 10 minutes.
5) Instead of pressure cooker, feel free to use an instant pot.
6) Select a mold that is heat resistant as well as will be able to hold all the ingredient mixture plus one that fits in the pressure cooker. I've used pyrex glass container. You can also use a metal dabba.
