This is great! I was actually making something similar yesterday and I was checking your channel to see if you had a choris masala recipe....I was 1 day too early!! In the end, my own recipe turns out to be very similar to yours!! I use saltpeter and dry the meat for a longer period, thats the main difference i can see

Keep it in the fridge, cook it for 1hr on slow flame or till it is nicely cooked.

can we add the masala to the meat and store inside fright on the refrigerator or below and till how many days .

You can store it in the freezer for months and below for 10 days, but if you are sure the meat is totally dried without any water you can keep it even longer.

Does the meat have to smoked or dried like it is done in Goa? How can the meat be dried conveniently, since we don't live in India

If you smoke or dry the sausages you will get lonk shelf life and they taste even better, you can put it in the oven for 60°c for 3 to 4 hrs.
