I was actually surprised Posiedon didn't have any tentacles, but the producers says they used tentacles too much in previous bosses (Kraken), so they approached the new idea of using crab/lobster legs instead, which I find very original. Also, they incorporated horses in his design because Posiedon is also God of Horses. I love this water-chariot design of him.

If you played God of War 2, there's a scene where Zeus killed Kratos with the Blade of Olympus. So his intention with the weapon is to use it in certain situations where he's overwhelmed or near death, and to kill Zeus for what he has done to him.

Do you mean health meters? The reason it doesn't have those is because they hinder immersion, also it makes the O appearance at the end that much more surprising and special because then you can see your progress in the form of a delightfully epic and gory interactive cutscene. I would hate to see health bars over enemies in God of War, I guess it wouldn't hurt to make them optional for people who care to have them, although I don't think enough people care for Sony to bother implementing them.
