I think a lot of the restaurants *LOVE* the publicity you give them. A lot of these "old school" style restaurants need to be preserved, in my opinion.

This channel is creating an incredible archive of many places and ways of life that may one day cease to exist. In London, all of the original delis, working mens cafes and diners have all but disappeared, I wish there had been this kind of documentation years ago to capture all the wonderful and unique establishments that are so important to our daily lives.

EXACTLY!!!!! TRADITIONAL ( with or without formal training in school) is still my choice - its always like eating at home.
I am an Australian who was fortunate enough to work as a cook in a Chinese restaurant for over 4 years. This is beautiful cooking, typical of the reflex fast cooking in the Chinese style. Beautiful to watch. I miss that job a great deal. He's stooped from doing that job for endless hours over many years.

Her commenting about the customers at the end of the vid where the regulars often just ask the chef to throw a bit more on their dish of this and that, and the chef just going along with it to the point of them making a "wagamama menu" (selfish menu) is what makes a mom and pop restaurant like this just great. 😊
Wow amazing that you did a video about this place! I live only 130m from this restaurant, and go here almost every week. I'm leaving Japan soon, so this video is a true treasure for me. 🥲 Thank you so much for helping me keep this precious memory of good food and wonderful neighbors! 🥰 P/s: I don't know whether you filmed them or not, but also in this street (Miyako shopping street), there is a cheap, friendly and delicious izakaya named 縁, which I come so often (more than 3 times/week) to enjoy their special 1 coin (500 yen) lunch set, and another famous udon/soba/oden restaurant named そば源, which I think was started long ago same as this Chinese restaurant. 🤤
and we just glimpse 14mins of his day.. wonder how much food he makes a day. well done.

My admiration of him , cook. He is realy excellent the way I watch him although havent tasted , i presume it taste good too. Thats how Our old folks moves too , when they cook traditional way, but no formal training. Wish can visit this.
Love it!!!! Looks so delicious. Old school. When he knows exactly how much salt to put in that he brushes off a couple of grains 0:32. This is definitely a place to go eat.

well, in some countries, if you leave the bowl empty it's because you didnt have enough food
I like how he distributed the fried rice evenly to allow the hottest portions to be right on top of each serving. Superb technique.
