You can try Indian food recipes...Like using soya as chicken..or paneer or tofu in place of chicken. You can use same spices and modify them as per your taste..Buy all spices at once and they would last for 3-4 months Edit: ok you can skip paneer from this..I added it in a flow. Tofu is soy milk..so that's fine

What I like about SEITAN is that it is really full of protein and, different from other vegan protein sources it doesn’t have as much fibers in it and also have some good texture, that is something that a lot of vegans miss.

I think it's better made into a PLAIN no seasoning patty shape... then steamed... then rinse it like a sponge 🧽 several times to wash out that GLUTEN flavor everyone hates about saitan... thennn marinate in your seasoning and grill or grind into your own crumbles... its Muuuch better flavor wise than leaving that wierd gluten wang in it. Trust me ✌🥰👍...

Well seasoned seitan is actually very good. Would absolutely work as a burger. Marinate over night. Fry it a bit crunchy in oil.

Make sure you knead it rather shorter. If you knead Seitan too long, it becomes more chewy. 5-10min kneading gives you a more chewy Seitan. There's also a bunch of different recipes; it's kind of trial and error which one you like the most. I know @avantgardevegan (Gaz Oakley) had an amazing steak (& salami recipe) on his channel. Like Marie suggested, I'd marinate over night as well and you'll have a nice burger patty along with cheese and toppings.

My boyfriend makes an amazing seitan brisket that’s SUPER close to the real thing. The trick is NOT to steam the seitan, but instead to roast it in the marinade or sauce for a looonnngg time

@@THEHORSELOVER235 uncovered at 350F. Basting every 20 minutes with whatever sauce or marinade you’re using, and flipping over. The longer you cook it the firmer it will be - my bf generally goes for 1.5-2 hours.

There’s a restaurant chain in my country, New Zealand, called “Lord of the Fries”. For their ‘chicken’ and ‘fish’ burgers and other varieties, it’s most likely that they use seitan. As someone that isn’t even vegan (I’m more flexitarian), it tastes so so so good

I really appreciate that Brooklyn-99-quote here...I personally feel like seitan has the most authentic mouthfeel resembling meat. If I'm making something like chicken tenders, I don't knead it that thoroughly, for beef, if I knead it very long, it gets that toughness you would expect from beef. Again: Just my taste and I actually only kind of liked steak so you might experience that differently. It's definitely worth giving it a try, seitan is so versatile!

I imagine that Seitan has the consistency of a thoroughly cooked piece of meat. Please correct me if I’m wrong. But yeah I will definitely try and make something like chicken tenders myself 😊

@@vivigoesusa Mmh, that's true, could be problematic...when I make my almost unkneaded chicken seitan, it tends to get very soft and moist, so maybe cooking this in a vegan beef stock could taste similar🤔. I am in love with Liv B's recipe, I would definitely recommend giving that a try😊.

Hint: try making a fried cutlet with that. Avoid soy sauce or tamari directly on the steak. I personally got gluten out of wheat flour in the past... it's a very long process! Then, I didn't steam the resulting gluten but I wrapped it in an aluminum foil and coocked it directly in the vegetable broth. The broth contained carrots, onions, greens and soy sauce. Once ready I cooked it Italian style in stews, scaloppine or as a cutlet with the coating made of chickpeas flour! It was my transition food from omnivore to vegan in Italy. However, my all time favourite is frittata (omelette) made with chickpea flour mixed with water. To the frittata base you can add whatever you like. My fav are frittata with spinach, frittata with asparagus and frittata with onions and potatoes. The secret is to cook the frittata in a pan with a little oil, cover the pan with a lid and chech it every now and then. When the bottom is quite crunchy and orange, flip it over and remove the lid, it would sweat otherwise. Cook on a medium-low flame so you make sure it doesn't get burnt. When the bottom is orange and crunchy as well it's done. You can eat it served with a fresh tomato, cucumber salad or, you can just put it in a panino and take it with you. Sure adding vegan mayo and rucola will make the taste even more interesting but if the panino is freshly baked, you are good to go! 😉👍💖 Merle, sorry for mispelling your name in a previous episode! 😂🤗😘

I had a vegan lamb yiros yesterday from a yiros food truck, the 'lamb' was made of seitan and my dad gave it the meat eater thumbs up of approval XD, just goes to show how versatile seitan is, you can add all sorts of seasonings to imitate your favourite meats. I still have yet to try make seitan myself (the glutenous flour is expensive where I live :'( but I hope to try it soon!

My husband who is a meat eater requested what he called "gluten steaks" a few years ago. He remembered them from when he was younger, a friend's mother who was a vegan used to make them for him. We've been trying to incorporate more vegetarian and vegan meals into our menu so I figured I would give it a shot. It would be nice to have the written recipe. Even though I guess most people won't actually try to make it. The protein content according to chronometer is 63,5 g for 28,6 g of carbs and a few grams of fat. Pretty good nutrition wise. I did tried the recipe following the video and the result was pretty much as they described. Not sure I would do this again considering the time it took. I am just curious as to why you steam those in waxed paper. I only had enough left to wrap one so I steamed the other as is and I didn't see the difference. Maybe it's just me. I know one of the reasons you wrap it is so it keeps it's shape but mine had no problem even without the paper...

I've made the Avante garden steak recipe before and thought it was fantastic! His recipe is different in a few ways... You need the 'meat' for 12 mins, not 4mins and you let the 'meat' sit in a broth for 1 hour simmering away, and then let it rest in the fridge for 24 hrs. I think those key differences might improve your steak! It definitely helps create a more meat-like texture I say.

this is a super interesting recipe with vital wheat gluten, in Hong Kong it's called 麵筋 used in vegetarian dishes, like a cold dish with edamame, wood ear mushroom, with a thick translucent sauce that's sweet-and-salty that we have! i love it and vital wheat gluten in general 😂

It can actually be really good and probably even fool you when made correctly. I notice Merle doesn’t do a great job when imitating foods but I see many other vegans and myself included do it with a lot more success!

Unfortunately the whole structure of seitan relies on gluten protein chains. I’m sure there are other meat substitutes that are similar that are gluten free

I do half vital wheat gluten and half rice flour :) better texture

I like to put rice wine vinegar, and some sugar , it takes that heavy gluten taste down a bit.

As a person who is trying to perfect her seitan all the time I have to say that if you cook it as Mongolian beef it is really close to the real thing, my father sometimes prefers it than actual meat

Honestly, I'm glad that this wasn't a good meat substitute. I have celiac disease, and I am always disappointed when I see meat substitute recipes that are supposed to be authentic with gluten.

I honestly think it was worth it to TRY -- I also think the recipe could be tweaked and made much better. But as far as a meat substitute goes, I Think this would be a great replacement for like meat on a sandwich or on pizza.

See my biggest problem* with vegan meat is the texture, like I LOVE the taste, but hate the mush (or even worse seedy) texture
