Making me wanna take a trip to Puerto Rico!! Suggestion for your next ceviche dish. Let the fish "cook" in the lime/lemon/orange juice seperately for 30-45 min in the fridge or on ice, drain the juices THEN add all your fixings and enjoy every chipful. Whatever you do, DO NOT add water, lol. You fellas would be so much fun to hunt and fish with!! Thank you for sharing as always and looking forward to the next island vs island challenge 💚🤙💚🤙💚

I cook the fish in pure lime juice with a little salt then drain it...Add your finely diced red bell pepper, banana peppers, white sweet onion, jalapeno, and cucumber.Toss it and then add some more lemon and lime juice(much less then the amount cooked in) and add some pepper 👌 next time give this a try

Killer location! I've got an alternative method for the cevichè. Clean the fish, cut the fins off, skin one side of fish to expose fillet, take a very VERY sharp filleting knife and cut slivers about 2 or 3mm thick. Lay these out on a deep plate (best in a staggered clock face arrangement). Once one fillet has been done flip the fish over and repeat the process. Depending on the amount of slivers you'll need about 6 limes, juice these into a jug. Pour the lime juice over each fillet individually. You're looking to just about cover the fillet, then move onto the next. Think of the lime juice like cooking oil? You want enough to get the job done, not too much so as to make it swim again. When the fish is half "cooked" then chop up your cilantro (or fresh dill or tarragon also works) etc etc. Once it's cooked then drain excess lime juice and sprinkle some sea salt over fish and then your herb mix.

It is a struggle to find good tackle here, there are places but you have to know where to look, chispa would have guided you to the right places...for big snook and tarpon you can catch almost everything with a 7'6" MH 1/2 to 1 1/2 rod and white DOA Cal Shads

I'll tell you why they lost so many tarpon. Yes it's true that circle hooks do set themselves. It's best to set the hook with tarpon because their mouths are so boney. Almost their entire mouth feels solid. That's why hooks slip so often, even when they do get a good hook set, Too much pressure pulls it right out. The first few dozen tarpon I had on the end of my line threw the hook and I couldn't understand why. I saw one up close a little while after and i realized it had a really hard mouth. I started setting the hook hard after that my hookup ratio with tarpon is second to none. I rarely lose fish, tarpon especially. I love fighting them. You can feel when they're about to jump so you know to bow and let them have enough slack. Don't set the hook when they run though, could break a pole or snap your line if your drag is tight.
