Wow, I am really surprised as to how bad these comments are... a bunch of unskilled cooks telling an expert what he is doing wrong. I'm especially surprised by the comments that are telling people to overcook pork. I feel bad for you all, anyone you cook for, and your future kids. Fantastic techniques on display here and many of you are too naive to realize it.

I loved the recipe. I happened to season the pork loin chops last night and looked up on KZbin how to roast them, so first pick was you, so I had all the ingredients you mentioned and cooked right along with you. I even prepared the piquant sauce. An extra I wasn’t thinking of and the combination was amazing!. Thank you so much.

No....Gordon is correct. It used to be that cooks were urged to cook their pork well done but that was because of "trichanosus" which is not found in pork anymore because of advanced farming and marketing techniques. Pork is best medium so that it retains its juiciness but not very pink either. Watch how Gordon handles his knives and how he cuts his meats prior to cooking.....it really makes a difference.

Just made this. Excellent. 395 F for us, take it out right at 15 minutes and let it rest for another 10. The pork will be perfect.
