Dear Mr. Ramsay I have been your fan for most of my life and thus know that you like to taste dishes from many different parts of the world. It has come to my attention that you have never been to my country Georgia and have never tried our wonderful cuisine. Let me tell you about my country: Georgia is a small country located at the intersection of Eastern Europe and Western Asia. It is a part of the Caucasus region and is bounded to the west by the Black Sea. Tbilisi is the capital and largest city. We have unique scripts, that were granted the national status of intangible cultural heritage in Georgia in 2015 and inscribed on the UNESCO Representative List of the Intangible Cultural Heritage of Humanity in 2016. Georgia’s pavilion was even opened in Frankfurt Book Fair in 2018 showcasing the wonders of our language and literature. Georgia is one of the oldest wine-producing countries in the world. The fertile valleys and protective slopes of the Transcaucasia were home to grapevine cultivation and Neolithic wine production for at least 8000 years. Georgia is home to more than 500 varieties of indigenous grapes-roughly one-sixth of the world's total grape varieties. We have a lot of different types of wine but the favourite will forever be ‘’qvevri” (special large clay pot that stores wine underground) wine. winemaking traditions are entwined with our national identity, and have been classified by UNESCO as part of the world's Intangible Cultural Heritage. Our national drink is Chacha ( grape pomace brandy) ranging from having 40% of alcohol to having 65% of it. Speaking of wine we have a huge variety of something that goes very well with it - cheese. This includes: Dambal'khacho, Guda, Sulguni, Tenili cheese and e.t.c. The country is devided in regions and each one has their own cuisine. We love useing spices like coriander, Blue fenugreek, Crushed Berberis Berries, Marigold, Caraway Seeds, Dried Ajika (our own mix of hot spices) and Svanetian(region in georgia) Salt. The national dishes of Georgia are Khinkali (similar to soup dumpling but not the same), Khachapuri (cheese bread (we have at least 9-10 different variants of this dish)), Chakapuli( spring light soup with fresh greens, lamb/calf meat and white wine), satsivi (turkey stock based dish, with turkey meat and blended walnut and spice mix (eaten cold)), kharcho ( beef stock based dish, with beef, blended walnuts and spices (usually eaten hot with ghomi)), pkhali(vegetarian dish made from different vegetables and/or greens, healthy fresh with walnuts and spices), churchkhela ( The main ingredients are grape must, nuts or walnuts, and flour. Almonds, walnuts, hazelnuts are threaded onto a string, dipped in thickened grape juice or fruit juices and dried in the shape of a sausage. Churchkhelas are snacks packed with calories, legend says that soldiers used to take them to battles and hide in belts to survive longer) and so on. We would like to invite you to our wonderful country and show you all the best parts of our cuisine and culture. The country is small everyone knows each other and we could manage to show you the uniqueness of all parts of Georgia. We would be able to do it anytime and would really love to have you. Thank you for your time! Looking forward to hearing from you. Tamara toidze

We used to vacation on Big Traverse Bay, Lake Superior in the U.P. for years. My heart is warmed just knowing Gordon was in that beautiful place full of memories. I hope he stopped at the Ambassador in Houghton for their pizza...Legendary. Love, From Detroit P.S. I was waiting for a Bald Eagle to come by and enjoy Gordon's breakfast, or perhaps a Black Bear. They used to come by just for a bag of Doritos we forgot by the fire 🦅🐻👀

I love Gordon Ramsey and I love this recipe. I subbed smoked salmon filet in place of the trout (because it's easier to find where I live) and it's still delicious. I have successfully used sour cream instead of creme fraiche, too. The smoked salmon salad mixture (creme fraiche, red onions, smoked fish, and parsley) is good just on a sandwich, too....similar to tuna salad sandwich.

Looks great, but I don't understand 'seasoning' the cheese. Cheddar already has plenty of seasoning in it (especially salt), and you can clearly see that adding the salt (even when melting it) basically just seeded crystallization of the salt already within the cheese (which is what the weird white stuff around the salt grains was). Admittedly, some of the white might have been the salt grains dissolving and being carried away as the cheese melted and stretched, but it was definitely crystallizing, too (which is the same sort of thing that happens when you have a cheese in the fridge for too long, and it starts to get those 'grains' of salt in it).
