I walked into this dingy alleyway, and said to the guy standing there "can I speak to Marco?" The guy turned around and looked at me. It was him. "Stand there."
For twenty minutes, I just stood there as he prepared pig's trotters. Part of me wanted to go "fuck this" and walk out, but another part was so fascinated watching him work, I stopped noticing how much time had passed.
Finally, we sat down in the dining room. "Look" he said. "We work so fucking hard here. This kitchen will be your life. There's no social life, no girlfriends, and it's shit money. If you take the time to learn and obsess over your craft, you WILL be rewarded. Marco & Gordon are two great examples of the following maxim: "you get out what you put in." But at a certain point, you must relax and appreciate your accomplishments.
