@Tidder T the name indonesia was first introduced by journal of the indian archipelago and eastern asia in 1850 while rendang has already been here in nusantara long before that.. So it is wrong to claim that the food is an indonesian only food since Singapore brunei and Malaysia also own the menu..

Hello, i'm from Indonesia, precisely from West Sumatera. We also cook Rendang as our traditional meal i think. I'm not here to meddling about the origin of Rendang, because both West Sumatera and Malaysia shares the same root of tradition. I'm here to share my knowledge about what have been mentioned in the video. So, "Agak-agak chef" is what precisely describe the "Melayu" tribes cooking habit. "Agak-agak" is "somewhat" in english, so basically, this lady just said to put the ingredient with the measure that somewhat pleases your heart and tongue. My family also runs this business, and so far, the "agak-agak" formula is still the best formula to keep the best quality of our products. Of course, because the amount of the ingredients is somewhat that pleases your tongue, Rendangs' flavor depends on the chef. But so far, the best flavor comes from the most experienced family member to ever cook Rendang, which is my grandma in my case. Several tips for making Rendang is to cook it on the what so called "Tungku Api" and not regular electric or gass stove, using coconut milk from an almost ripe coconut, grinding the ingredients with your own hands and putting a lots of chili on your recipe. Rendangs' flavor also depends on how long it's been made. As you could see in the video, that was the first stage of Rendang. as the time flows, the texture and the color of Rendang will change and it also changes the flavor. I really love Rendang and i really love to share my knowledge about it. I know, i'm not a chef but i really love cooking. i hope you read this sir, and hope you're willing to make more Rendang with your style and the traditional one.

Older people who lives in villages cook rendang better and delicious😄😄😄😄They know the right spices and flavour their rendang.I loves rendang so much when hari raya it taste better serve with ketupat or nasi impit.We Malaysian and Indonesian loves our rendang so much we all cakes from the same roots.So no hard feelings for the rendang guys

My mother is from Malaysia and she also taught me to cook in this way. No measurements, just whatever you feel; to your taste. It's hard to master, but you just gotta have fun and play with food. It doesn't need to be precise!

Fire & heat are never constant, only temperature is needed to be constant. Even ingredients that have the same weight may not carry the same weight of flavour density. A true chef can cook without a recipe only knowing the ingredients needed, as they understand the balance of flavours needed to make a dish. I respect chefs

As someone who is half thai, we also have this same notion of ''agak'' with a lot of our dishes. Not a lot of street vendors in Thailand will have a precise recipe. It's a lot of eyeballing, tweaking around, and quick modifications. Just like in Malaysia!

@@jonip5448 the thing is malaysians do know that rendang originates from sumatera, but we have our own style as well that can be considered malaysian. Its like pasta. Most pasta dishes are italian but there are pasta dishes like spaghetti and meatballs which are exclusively american. Not to mention a lot of malays have minang or javanese ancestry so i dont get what the fuss is about.

I strongly believe that the aga-aga of the Malays is the "igo-igo" of the Cebuano-Visayans. Literally "igo-igo" means "enough enough" which is practically determined by the cook. @ all ranting Indonesians there, Rendang is a Minangese dish, and Minangese people lives in BOTH Indonesia (West Sumatra) and Malaysia (Negeri Sembilan), they migrated from sumatra to peninsular malaysia at the 16th-17th century, when the king of Pagaruyung established a vassal state in Negeri Sembilan, and installed his relatives as the kings of Negeri Sembilan, so it's not Malaysia claiming Indonesian dish because the dish itself predates the existence of both countries

That’s really how a good cook prepare their dishes. If you’re good you don’t rely on recipes, you see the amount of beef or chicken you’re going to cook and just calculate the perfect balance amount of onions and other ingredients. People who master this can cook without even tasting and the dish will come out as delicious as usual. That kind of intuition connects you the cook with the dishes you’re preparing.

I'm Indonesian, and I gotta say to everyone else that y'all are seriously missing out if you've never tried rendang. It takes ages to cook for sure(the one my mom makes personally), but boy is it worth it. The taste is amazing and I highly recommend it

He's not wrong, it is malay (melayu) food, malay not only mean malaysia, it also mean an ethnic or culture, theres 5 millions of malays in indonesia too, especially in sumatra.

Maybe this version of rendang is Malaysian version. Its bit different how to cook with West Sumatra rendang.

Yes it is. In Negeri Sembilan, Malaysia rendang is a common sight because this state holds strong Minangkabau influence. In fact the Minangkabaus migrated to Malaya in the 17th century and established Negeri Sembilan in 1775.

@bram syamith there isn't Malaysia nor Indonesia yet during the time Minangkabaus migrated to the Malay Peninsula. Yep they've been on Sumatra since the beginning but they have to migrate to another place (merantau) for a better living. They mostly settled in Negeri Sembilan darul Khusus, where ethnic Malays of Minangkabau descent make up the bulk of its populstion. Do u wanna say Negeri Sembilan also steal rendang from West Sumatra?

@bram syamith Indians are brought to Malaya by the British under the Kangany system of trading labourers. Upon arrival they settled in British - owned rubber and oil palm plantations. The majority of Malaysian Indians are of South Indian descent (Tamil, Telugu, Malayalam, Kannada). They also cook curry and their traditional cuisine just like their distant Indian relatives. That's why many Mamak and Nasi Kandar restaurants offer Indian food such as roti canai (Malaysian equivalent to paratha), a variety of curries such as fish head curry, mutton curry, beef curry and okra curry, naan, tandoori chicken, briyani, idli, poori, vaday and Mamak - style fried noodles. I'm not saying that curry is also from Malaysia, but it is introduced by Indian immigrants. Same as rendang. Originally from West Sumatra, introduced to Negeri Sembilan, Malaya by Minangkabau migrants. Minang delicacies such as terung balado, ikan balado, rendang, nasi Padang, sembilang salai masak lemak lada api, ayam masak lemak lada api, otak masak lemak cili api, babat masak lemak cili api, belalang masak lemak lada api and gulai jangek are common entries on menus in every restaurants in Negeri Sembilan.
