There is no doubt that Chef Ramsay will make the fried rice the proper way considering he's really expanded his knowledge and understanding of Asian cooking by visiting various Asian countries over the last few years. Look at all those other Asian dishes he's made on his channel after. He will often reference the traditional cooking techniques from the origin of those countries. Not only is he carrying out the traditional way of cooking these dishes, he is also educating the viewers. This is how it should be done. Cook rice? You need to be taught how to cook rice? Jesus... Yeah, I'm never moving out of Asia...
@lelamadjiah824610 ай бұрын
What i do is boil tomatoes, chilis and onions, then grind them. An alternative is to fry the ingredients before grinding them. Scramble the eggs first, set aside. Fry the ingredients in oil and when they turn yellowish put in the rice, sliced chicken, sliced meatballs, mix thoroughly, then put in the scrambled eggs and sliced chives. Add soy sauce if you like. You can also add shrimp paste if you like. Mix well and then it's ready. Serve it with shrimp chips or emping. That's our traditional fried rice recipe from Jakarta.

I do put little bit water to 'break' the rice lump , since we tend to use medium grain rice here, and I'm already tried Hersha technique to rinse the rice after cooking it , it makes a 'leftover' rice texture and taste from a freshly cooked rice, suitable for fried rice rather than freshly cooked rice from rice cooker that are lumpy , you should try it... really.... There's a lot of ways to cook a rice.

Food looks good too - lucky I'm Asian and know where to find most of those ingridence but for the rest they might still have to patronize their local Indoesian takeaway as not every suburbs close to Asian store. While supermarkets are increasing their Asian produce but for some suburb (mind you our local supermarket has even got rendang and I wouldn't have thought that though it doesn't have garlic chive flowers well one can swop maybe?) Some of those ingredience is abit hard to come by on the fly but hey there isn't that many Indonesia restaurants around so that might be a great thing either way to patronize them and if you have eaten Indonesia or very often before this really makes you wanna - I know I'm salivating!
