You can totally tell that those tortillas AInT Mexican, also mostly Mexican tradition food does not use oven much. Recently is been incorporated, but traditionally is not something ágüelitas use. However I’m going to try to make. It’s like a lasagna with out the tortillas. Cause putting the tortillas will make them super aguadas (saggy)

The 180 in the oven for 8 to 10 minutes still makes the eggs runny and didn't melt the cheese (mind you I used monterey jack shredded as a substitute). What I did is place the cheese on top after you placed the mix inside the bowl with the corn tortillas, put in the oven at 350 for 10 minutes, cook the eggs separate sunny-side-up, take the dish out of the oven (or once the cheese melts), put the cooked eggs on top of the melted cheese, and then add the coriander to finish it off. The most "similar" dish to this are the Huevos al albañil, but with the addition of the beans. Los Huevos al albañil primero se prepara la salsa, aunque tiene que quedar más aguadita y luego se le ponen los huevos.

@@rimacalid6557 We don't use cheddar cheese in Mexican food. Cheddar doesn't even exist in our food. We have "queso fresco" which is very mild in flavor (like a young cheese, salty, soft and the texture is similar like fetta but very different in the taste). We usually spread it on top of some dishes as a last touch. Cheddar tastes completeeeeeely different, for me, is exactly the opposite of queso fresco. It messes with the flavor and the memories I have of my food. I like cheddar but not on Mexican food because changes the taste. That is my opinion as a mexican. Of course, everybody is free to try mexican inspired food the way the want :)

@@vaniavergara3125 you literally mentioned the only ingredients of the whole recipe that you could say aren’t Mexican. Cheddar comes from England. Cumin is cultivated in Mexico. So literally the only thing he used that wasn’t Mexican was the cheddar cheese. But you could argue that other recipes of Mexican dishes use butter, that wouldn’t make the dish not mexican 😂 the fact that he used one foreign ingredient doesn’t validate your point. The spice you put on a dish doesn’t make it less Mexican either 😂 people put pineapple on al pastor tacos, pineapple isn’t Mexican. It was adopted into a Mexican dish, would that make al pastor tacos not Mexican? 🤔 NO.

How Mexicans actually make eggs (Recipe for 2 people): *3 Tomatoes *1 Quarter of a white onion *1 Serrano Pepper (When not available, use a Jalapeño) * 2-3 Eggs Chop the onion, the tomatoes and the pepper. In a non-stick pan, cook the onions with olive oil, wait 1 minute. Add the pepper, cook for another minute. Add the tomatoes, cook for another minute. In a separate plate, scramble the eggs and season. (Some people like to scramble inside the pan, its your choice though). Pour everything into the pan and cook for 1-2 minutes and you're done.

Yeah there are some things canned or frozen that almost all chefs use all the time, and one of them is canned tomatoes. They are literally just tomatoes but they develop a stronger tomato flavour being canned so in this case they are perfect!

I'd do this with some cotija, no problem. But I some Mexican soft cheeses are probably harder to get in the UK. I'd use canned beans and tomatoes if the alternative was not trying it at all! My mama wants me to eat, and canned beans and tomatoes are an easy staple for me to keep around!

Chromatic aberration was much more common in older camcorders - you typically don't see it as much in detachable lenses, and modern camcorders don't have it as much. So it's possible they just never got new ones, since it's present in just about all of these videos.

What a novel way to use tortillas. Same for the rest of the recipe. I may try it someday to surprise my Mexican family with something really different. I would still use tortillas only to the bottom of the pan, since we’re not so fond of such Americanized uses of tortilla. Of course to each his own.
