Worked at a restaurant like this. One of our “chefs” lived in a tent at a campground. Another would pick weeds from outside and use them as a garnish. The owner was an alcoholic brit who lost the business because of gambling debts. A new Italian owner took over gathered all the staff said if he caught anyone stealing they’d go missing.
