I was right there with you the whole way Chef.. Skirt steak is one of my absolute favorites, but please correct me if I'm wrong. At the end, you cut it WITH the grain. Cut it WITH the grain into 2-3 inch slabs, and then slice those slabs the other direction ( AGAINST the grain) into edible slices. Melts in your mouth!!! Fantastic recipe that I will try.

it's not good for presentation to cut in that matter, which is why he cut with the grain, because a very small percentage of viewers watching this are trying this recipe to eat it themselves. Most people are eating with their eyes. The plating at the end was beautiful, BUT the food definitely tasted cold (make the garnish before cooking the temperature sensitive protein people), greasy, tough, and there was nothing in the dish to cut through the richness of all the fat in the fricasee and the oil in the chimichurri, and eating this would've left you feeling terrible afterwards. Gordon ramsay food tends to be subpar, nobody should use him to learn or for recipes, only for entertainment.

To everyone complaining about the oil, skirt steak is really tender and delicate cut and hardly has any fat, so you need to use that much oil to make sure that you do not dry it out, and make sure it remains tender

I was a butcher when i was in college and unless its purely grass fed and grass finished, skirt steak is pretty decently marbled in fat and is entirelu dependant on how much your local butchers trim off. But skirt itself has a pretty decent fat cap on it when it first comes off the cow.

You just "know" how potent ingredients are, what flavors work well together, what proportions to use, when to add them and how to prepare them. Chefs or cooks may provide recipes but it's just a baseline for those who don't truly understand cooking. You can't "teach" someone to cook - it's an art, it's a passion, it comes naturally. You can show them techniques but if it's not in someone, it shows in the dishes they make. I am close to someone who doesn't "get" food. I'm a foodie. We can make the same exact dish and you can tell the one that came from someone who has passion for food and someone who doesn't.

Perhaps it's a bit unhealthy, but he's not cooking that particular dish for the sake of health, it's for the flavor. And you can't deny that that skirt steak would taste amazing. He's a world-renowned Michelin celebrity chef, of course he's going to be extra.

Rishabh Dey no cooking with a high quality extra virgin olive oil is okay. it won't break down as easy because of the high antioxidant content. it's highly resistant to heat and has been shown in numerous studies that it can even hold up to high heat for a constant 8 hours before degrading.

So easy! truly outstanding flavor. The Skirt steak tastes like a cross between a strip, ribeye and prime rib. I followed this thisskirt Steak recipe exactly like the video minus the chimichurri sauce. I have never purchased skirt Steak in my life, was scared too. now its my go to. The steak alone provided plenty of flavor and juice just with the rub and cook method. Thank you! Byron

Well he did slice the steak with the grain. Though in his defense you would use a knife to cut the slices into smaller pieces when eating this.

eh if its rested it shouldn't bleed and should hold juices fairly well, you can also soak them if it runs out anyways, and it'd give the beans a triple layer of absorption of flavor according to Ramsey I bet lmao
