Just tried this. Notes: I made my rub with chipotle, paprika, salt, finely ground coffee, and coconut palm sugar (the least refined sugar I had on hand). The sear takes some of the spice out, so I wouldn't be afraid to make the rub with some kick. No need for black pepper in the rub. I used Yukon gold potatoes, quartered lengthwise. That worked ok. I didn't blanch mine quite enough, which meant more time in the pan, which meant the steak was waiting a bit too long, so be sure to start this whole process by blanching your potatoes until they are almost done cooking so they don't need much sear time. That is the biggest timing variable, as long as you've prepped all your ingredients before you start the steaks in the pan. I don't know where you get thyme flowers, so I just used fresh thyme leaves in the mushrooms and it was great. I cooked three steaks. I used two portabello caps and a pack of mixed mushrooms from the refrigerated mushroom section at my grocery store. That was barely enough, so I'd probably do a bit more next time. The trick is to get them all to fit in the pan(s) at the beginning before they've cooked down a bit. Keep the pan hot and they cook down quickly. The steaks were amazing without any sauce. If anything, at least the way I did it, the bold flavor of the rub overwhelmed the more delicate flavor of the mushrooms a bit, but honestly I think the answer is just more mushrooms so you don't have to eat them sparingly.

OMG, im not a steak eater bc they just don't do anything for me at medium well, however, i picked up 2 pk of RIBEYES and tonight's methods of cooking GR way 20m room temp, minus the tyme and or rosemary and butter (i forgot the butter), with my grilled cast iron pan WAS AMAZING❤❤❤ with just salt, pepper and crushed garlic. It was rare-medium well (i NVR EAT PINK ANYTHING), let it rest for 5-7m JUICES & THE MOST SUCCULENT & FLAVORFUL SHINE EVERYWHERE❤❤❤❤❤❤❤❤❤❤. TY GR🎉🎉🎉

I think he means lower the gas. When you put the butter in, you don't want the pan to be flaming hot because it'll burn the butter and you lose the nutty notes. It becomes brown butter at that point. The shallots and garlic have been finely diced, so you don't want to put the garlic and shallots first. He said sauteed the mushrooms first.

I've cooked the Steak and potatoes twice since watching this. Gordon has schooled me big time! I use to only be a filet mignon or occasional Ribeye person. Now I must have a NY Strip done this way. And the potatoes! I wept when I bit into them. Crispy on the outside, fluffy and tender on the inside. I'm learning to cook all over again. Thank you Chef Ramsay!

rcradiator agree, i personally would put it in a small bowl so if that steak needs that bbq sauce then only i can eat it with the steak

As an italian I strongly agree. Those juices are the real essence of the dish and they must stay pure. Also the meat itself look high quality so why cover those beautiful tastes with a sauce?

If you really are looking for it, and havn't found it. ½ cup Ancho chili powder ½ cup Coffee, ground 1 cup dark brown sugar 4 tbsp. Smoke paprika 2 tbsp. cumin 2 tbsp. Oregano 1 tbsp. Onion powder 1 tbsp. Garlic powder 4 tbsp. sale 1 tbsp. Black pepper Step 1. Make the steak dry rub steak seasoning by combining the chili powder, ground coffee, brown sugar, paprika, cumin, oregano, onion powder, salt, and black pepper in a mortar pestle.
